  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup sour cream
  • 1 ½ cups fresh or frozen cranberries

For the Streusel Topping:

  • ½ cup brown sugar, packed
  • 1 teaspoon ground cinnamon
  • 1/3 cup all-purpose flour
  • ¼ cup unsalted butter, softened
  • ½ cup chopped pecans

Instructions

  1. Prepare the Oven and Pan:
    • Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round or square cake pan.
  2. Make the Cake Batter:
    • In a medium bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
    • In a large bowl, cream together butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
    • Alternately add the dry ingredients and sour cream to the butter mixture, beginning and ending with the dry ingredients. Mix until just combined.
    • Gently fold in cranberries and chopped pecans.
  3. Prepare the Streusel:
    • In a small bowl, combine brown sugar, cinnamon, flour, and butter. Use a fork or your fingers to mix until crumbly. Stir in chopped pecans.
  4. Assemble the Cake:
    • Pour the batter into the prepared pan, spreading evenly. Sprinkle the streusel topping over the batter.
  5. Bake:
    • Bake for 45-50 minutes or until a toothpick inserted into the center comes out clean. Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  6. Serve:
    • Slice and serve with a hot cup of coffee or tea for a delightful treat.

  • Make Ahead: You can prepare the cake the night before and store it at room temperature for a delicious breakfast the next morning.
