- 1/2 cup sour cream (for extra moisture)
For the Cappuccino Buttercream Frosting:
- 1 cup unsalted butter (softened)
- 1 1/2 cups powdered sugar
- 1/4 cup heavy cream (or milk)
- 1/4 cup strong brewed coffee (cooled to room temperature)
- 2 tbsp instant espresso powder (dissolved in hot water)
- 1/2 tsp vanilla extract
- Pinch of salt
For the Coffee Syrup (optional):
- 1/4 cup strong brewed coffee
- 2 tbsp sugar
- 1 tbsp rum or coffee liqueur (optional, for extra flavor)
For the Garnish (optional):
- Shaved chocolate
- Coffee beans
- Cocoa powder for dusting
- Whipped cream (optional)
Instructions:
1. Make the Coffee Cake Layers:
- Preheat your oven to 350°F (175°C). Grease and line two 9-inch round cake pans with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon (if using). Set aside.
- In a large mixing bowl, beat the softened butter and sugar together until light and fluffy, about 3-4 minutes.
- Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
- In a separate small bowl, mix together the cooled brewed coffee, buttermilk, and dissolved espresso powder.
- Gradually add the dry ingredients to the wet ingredients, alternating with the coffee mixture. Start and end with the dry ingredients. Mix until just combined.
- Stir in the sour cream for extra moisture.
- Divide the batter evenly between the two prepared pans and smooth the tops.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cakes cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.
2. Make the Cappuccino Buttercream Frosting:
- In a large mixing bowl, beat the softened butter on medium speed until creamy.
- Gradually add the powdered sugar, 1/4 cup heavy cream, cooled coffee, and dissolved espresso powder. Beat until smooth and fluffy.
- Add the vanilla extract and a pinch of salt. Continue beating for another 2-3 minutes until the frosting is light and airy.
3. Prepare the Coffee Syrup (Optional):
- In a small saucepan, combine the brewed coffee and sugar. Heat over medium heat, stirring until the sugar dissolves.
- Once the syrup is dissolved, bring it to a gentle simmer and cook for 3-5 minutes until it thickens slightly. If using, stir in the rum or coffee liqueur. Let the syrup cool to room temperature.
4. Assemble the Cake:
- If you prefer an extra coffee kick, lightly brush each cake layer with the cooled coffee syrup to infuse them with extra flavor.
- Place the first cake layer on a serving platter or cake stand. Spread a generous layer of cappuccino buttercream frosting over the top.
- Place the second cake layer on top and frost the entire cake with the remaining buttercream frosting.
- Smooth the frosting around the sides and top, creating a nice finish.
5. Decorate the Cake:
- Garnish the top of the cake with shaved chocolate, whole coffee beans, or a light dusting of cocoa powder.
- For a more festive touch, top with a swirl of whipped cream and an additional sprinkle of cocoa or cinnamon.
6. Serve and Enjoy:
- Slice the cake and enjoy the rich, creamy layers of coffee and frosting. Pair it with your favorite cup of coffee for the ultimate coffee lover’s experience!
Tips:
- Use high-quality coffee for both the cake and frosting for the best flavor.
- For an extra indulgent touch, drizzle some chocolate ganache on top of the cake before serving.
- If you don’t have buttermilk, you can substitute it with regular milk or add a tablespoon of vinegar to regular milk to make a buttermilk substitute.
This Coffee Lover’s Dream Cake – Creamy Cappuccino Delight is perfect for any coffee enthusiast, offering a smooth, creamy, and deeply flavorful experience with every bite!
