Ingredients:
For the Chocolate Cake:
- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsweetened cocoa powder
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 2 large eggs
- 1/2 cup buttermilk (or whole milk)
- 1/2 cup vegetable oil
- 2 tsp vanilla extract
- 1 cup boiling water
For the Chocolate Mousse:
- 8 oz dark chocolate (70% cocoa), chopped
- 1 1/2 cups heavy cream
- 1/4 cup powdered sugar
- 1 tsp vanilla extract
For the Chocolate Rosettes:
- 6 oz semi-sweet chocolate, chopped
- 1/2 cup heavy cream
For the Garnish:
- Fresh berries (optional)
- Chocolate shavings or curls (optional)
- Mint leaves (optional)
Instructions:
1. Make the Chocolate Cake:
- Preheat your oven to 350°F (175°C). Grease and line the bottoms of two 8-inch round cake pans with parchment paper.
- In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- Add the eggs, buttermilk, vegetable oil, and vanilla extract. Mix until smooth.
- Gradually add the boiling water to the batter, mixing until well combined. The batter will be thin, which is normal.
- Pour the batter evenly into the prepared cake pans.
- Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
- Let the cakes cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
2. Prepare the Chocolate Mousse:
- Melt the dark chocolate in a heatproof bowl over a double boiler or in the microwave, stirring every 20 seconds until smooth.
- In a separate bowl, whip the heavy cream and powdered sugar to soft peaks.
- Once the chocolate has cooled slightly, fold it gently into the whipped cream until smooth and combined.
- Refrigerate the mousse for about 30 minutes to firm up.
3. Make the Chocolate Rosettes:
- In a small saucepan, heat the heavy cream until it begins to simmer.
- Pour the hot cream over the chopped semi-sweet chocolate and let it sit for a few minutes.
- Stir the mixture until smooth and glossy. Let it cool to room temperature, then refrigerate for about 20 minutes or until it thickens to a pipeable consistency.
- Transfer the chocolate ganache to a piping bag fitted with a star tip.
- On a parchment-lined baking sheet, pipe chocolate rosettes by starting from the center and swirling outward in a circular motion.
- Refrigerate the rosettes until firm, about 30 minutes.
4. Assemble the Cake:
- Once the cakes are completely cooled, carefully slice each cake in half to create four layers.
- Place one layer of cake on a serving platter and spread a generous layer of chocolate mousse on top.
- Add the second layer of cake and repeat with the mousse, continuing for all layers.
- Spread the remaining mousse over the top layer of cake.
5. Decorate the Cake:
- Gently arrange the chocolate rosettes on top of the mousse layer, covering the cake in an elegant, floral design.
- Garnish the cake with fresh berries, chocolate shavings, or curls for an extra touch of elegance.
6. Chill and Serve:
- Refrigerate the cake for at least 1 hour to let the mousse set and the rosettes firm up.
- Slice and serve the Chocolate Rosette Bliss Cake with a side of fresh berries or a dollop of whipped cream, if desired.
Tips:
- You can prepare the cake and mousse a day in advance, letting the flavors develop and the mousse firm up nicely.
- If you don’t have a piping bag, you can use a ziplock bag with the tip cut off to pipe the chocolate rosettes.
- For an added touch, drizzle some melted white chocolate over the rosettes for contrast.
This Chocolate Rosette Bliss Cake is an indulgent treat that’s perfect for any chocolate lover. The combination of rich chocolate cake, fluffy mousse, and delicate chocolate rosettes creates a decadent and visually stunning dessert that’s sure to be the star of any gathering!
