A Chocolate Cookie Dough Lava Cake is a decadent, indulgent dessert that combines gooey chocolate lava cake with the irresistible flavor of raw cookie dough! Here’s a recipe to make these mouthwatering treats:

Ingredients:

For the Lava Cake:

  • 1 cup semi-sweet chocolate chips (or chopped dark chocolate)
  • 1/2 cup unsalted butter
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar (packed)
  • 2 large eggs
  • 2 large egg yolks
  • 1 tsp vanilla extract
  • 1/4 cup all-purpose flour
  • A pinch of salt

For the Cookie Dough Filling:

  • 1/4 cup unsalted butter (softened)
  • 1/4 cup brown sugar (packed)
  • 1/4 cup granulated sugar
  • 1/2 cup all-purpose flour
  • 1/4 tsp salt
  • 2 tbsp milk (or heavy cream for a richer filling)
  • 1/4 tsp vanilla extract
  • 1/2 cup mini chocolate chips (optional, for extra texture)

For Garnish (Optional):

  • Powdered sugar
  • Extra chocolate chips or mini cookies
  • Ice cream or whipped cream

Instructions:

1. Prepare the Cookie Dough Filling:

  • In a bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth.
  • Add the vanilla extract, milk, and salt, and stir until well combined.
  • Gradually mix in the flour, then fold in the mini chocolate chips.
  • Form small balls of cookie dough (about 1 teaspoon each) and place them on a plate or tray. Freeze the dough balls for about 30 minutes to firm up.

2. Prepare the Lava Cake:

  • Preheat your oven to 425°F (220°C). Grease and flour 4 ramekins (6 oz size) or use non-stick spray.
  • In a heatproof bowl, melt the butter and chocolate together, either in the microwave (stirring every 20 seconds) or using a double boiler.
  • Once melted, stir in the granulated sugar and brown sugar until well combined.
  • Add the eggs and egg yolks, one at a time, mixing well after each addition. Stir in the vanilla extract.
  • Sift in the flour and a pinch of salt, and fold until just combined. Be careful not to overmix.

3. Assemble the Lava Cakes:

  • Spoon a small amount of the chocolate batter into the bottom of each ramekin (about 2 tbsp).
  • Place a frozen cookie dough ball in the center of each ramekin, then cover with the remaining chocolate batter.
  • Make sure the cookie dough is fully covered with the chocolate batter.

4. Bake the Lava Cakes:

  • Bake the cakes in the preheated oven for 12-14 minutes, or until the edges are set but the center is still soft and slightly jiggly. The tops should look slightly cracked.
  • Remove from the oven and let them sit for 1-2 minutes before serving.

5. Serve and Enjoy:

  • Carefully run a knife around the edges of the ramekin to loosen the cakes. Invert each ramekin onto a plate and gently lift it off.
  • Garnish with powdered sugar, extra chocolate chips, or mini cookies. You can also serve with a scoop of vanilla ice cream or a dollop of whipped cream for extra indulgence.

When you cut into these Chocolate Cookie Dough Lava Cakes, the molten chocolate center and the gooey cookie dough filling will flow out, creating a perfect combination of chocolatey and cookie dough goodness. Enjoy this indulgent dessert for any special occasion or just when you’re craving a sweet treat!
