Ingredients (Serves 10-12):
For the cake:
- 1 3/4 cups (220g) all-purpose flour
- 1 1/2 cups (300g) granulated sugar
- 3/4 cup (75g) unsweetened cocoa powder
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 1 teaspoon salt
- 2 large eggs
- 1 cup (240ml) whole milk
- 1/2 cup (120ml) vegetable oil
- 2 teaspoons vanilla extract
- 1 cup (240ml) boiling water
For the chocolate frosting:
- 1 cup (230g) unsalted butter, softened
- 3 1/2 cups (440g) powdered sugar
- 1/2 cup (50g) unsweetened cocoa powder
- 1/4 cup (60ml) whole milk (or more for desired consistency)
- 2 teaspoons vanilla extract
- A pinch of salt
Instructions:
1. Prepare the cake:
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line them with parchment paper.
- In a large mixing bowl, sift together the flour, cocoa powder, sugar, baking powder, baking soda, and salt.
- Add the eggs, milk, vegetable oil, and vanilla extract. Beat on medium speed until smooth and combined.
- Gradually add the boiling water and mix until the batter is smooth. It will be quite thin, but that’s okay!
- Pour the batter evenly into the prepared cake pans.
- Bake for 30-35 minutes, or until a toothpick inserted into the center of the cakes comes out clean.
- Let the cakes cool in the pans for about 10 minutes before transferring them to a wire rack to cool completely.
2. Make the frosting:
- In a large mixing bowl, beat the softened butter until smooth and creamy.
- Gradually add the powdered sugar, cocoa powder, milk, vanilla extract, and a pinch of salt. Beat until fluffy and smooth. If the frosting is too thick, add more milk, a tablespoon at a time, until it reaches your desired consistency.
- If the frosting is too thin, add a little more powdered sugar to thicken it up.
3. Assemble the cake:
- Once the cakes have completely cooled, place one cake layer on a serving plate.
- Spread a generous amount of frosting on top of the first layer.
- Place the second cake layer on top and frost the top and sides of the entire cake with the remaining frosting.
- For an extra touch, you can decorate the top with chocolate shavings, sprinkles, or fresh berries.
4. Serve and enjoy:
- Slice and enjoy this Decadent Chocolate Cake—perfect for any celebration or when you just need a slice of pure indulgence!
Tips:
- Make it a layered cake: If you prefer, you can slice each cake layer in half horizontally to create a four-layer cake for extra frosting and decadence.
- Flavor variations: Add a teaspoon of espresso powder to the cake batter for a richer chocolate flavor or try adding a hint of mint or orange extract to the frosting.
- Make ahead: This cake can be made a day in advance. Just store it in an airtight container at room temperature or in the fridge.
This Decadent Chocolate Cake is perfect for every celebration, bringing pure indulgence in every slice.
