Here’s a delicious and simple recipe for Biscoff Truffles, combining the caramelized, spiced flavor of Biscoff cookies with rich chocolate and creamy filling. These truffles make the perfect sweet treat for any occasion!

Ingredients (Makes about 20 truffles):

  • 1 1/2 cups (150g) Biscoff cookies (crushed into crumbs)
  • 8 oz (225g) cream cheese, softened
  • 1/4 cup (60g) powdered sugar
  • 1/2 teaspoon vanilla extract
  • 8 oz (225g) white chocolate (or milk chocolate if preferred), chopped
  • 1/4 cup (60g) heavy cream
  • A pinch of sea salt (optional, for extra flavor)

Instructions:

1. Prepare the Biscoff filling:

  • In a large bowl, crush the Biscoff cookies into fine crumbs. You can use a food processor or place the cookies in a ziplock bag and crush them with a rolling pin.
  • Add the softened cream cheese, powdered sugar, and vanilla extract to the crushed cookies. Mix everything together until smooth and well-combined. You can use a hand mixer or a spoon to blend it together.
  • Once combined, refrigerate the mixture for 30 minutes to help it firm up.

2. Shape the truffles:

  • After chilling, scoop small amounts of the cookie mixture (about 1 tablespoon each) and roll them into balls. Place them on a baking sheet lined with parchment paper.
  • Chill the truffles in the refrigerator again for about 20-30 minutes to make them easier to coat with chocolate.

3. Make the chocolate coating:

  • While the truffles are chilling, melt the white chocolate (or milk chocolate) and heavy cream together in a microwave-safe bowl. Heat in 30-second intervals, stirring in between, until the mixture is smooth and fully melted.
  • If you want a thicker coating, you can add a bit more chocolate. If you want a thinner coating, add a little more cream.

4. Coat the truffles:

  • Once the truffles are firm, dip each one into the melted chocolate, making sure it’s fully coated. Use a fork to lift the truffle out of the chocolate and gently tap to remove any excess.
  • Place the coated truffles back onto the parchment paper.

5. Finish the truffles:

  • Optional: Sprinkle a pinch of sea salt on top of each truffle for added flavor contrast.
  • Allow the truffles to set at room temperature or place them in the fridge for about 15 minutes to firm up.

6. Serve and enjoy:

  • Once the truffles have set, they are ready to enjoy! Serve them as a delightful treat or gift them in a cute box for special occasions.

Tips:

  • Flavored coating: You can also coat the truffles with melted dark chocolate or drizzle with a little more Biscoff spread for extra flavor.
  • Storage: Store the Biscoff truffles in an airtight container in the fridge for up to 1-2 weeks.
  • Make ahead: These truffles can be made ahead and refrigerated for up to 3-4 days before serving.

These Biscoff Truffles are the perfect bite-sized treat with a unique flavor, and they’re sure to be a hit with anyone who loves Biscoff cookies or chocolate!
