These Snowy Sapphire Truffles are a delightful and luxurious treat perfect for the holiday season or any special occasion. Made with a creamy white chocolate ganache center and a hint of blueberry flavor, these truffles are rolled in sparkling coconut flakes to give them a “snowy” finish. They’re as stunning as they are delicious!
Ingredients:
For the Blueberry Ganache:
- 8 oz white chocolate, chopped
- ¼ cup heavy cream
- 2 tbsp blueberry jam or blueberry puree (or blueberry extract for a stronger flavor)
- 1 tsp vanilla extract
For the Coating:
- 1 cup shredded coconut flakes (preferably unsweetened)
- 2 tbsp edible glitter (optional, for extra sparkle)
- 1-2 tbsp powdered sugar (optional, for a snowy effect)
Instructions:
1. Make the Blueberry Ganache:
- In a heatproof bowl, place the chopped white chocolate.
- In a small saucepan, heat the heavy cream over medium heat until it begins to simmer (do not let it boil).
- Pour the hot cream over the chopped white chocolate and let it sit for 1-2 minutes. Stir gently until the chocolate is fully melted and smooth.
- Stir in the blueberry jam or blueberry puree (or blueberry extract) and the vanilla extract until well combined. The ganache should be smooth and creamy.
2. Chill the Ganache:
- Let the ganache cool to room temperature, then cover the bowl with plastic wrap and refrigerate for at least 1-2 hours, or until firm enough to scoop.
3. Form the Truffles:
- Once the ganache is firm, use a small spoon or melon baller to scoop out small portions of the ganache. Roll each portion between your hands to form smooth balls. Set them on a parchment-lined tray or plate.
4. Coat the Truffles:
- In a shallow bowl, place the shredded coconut flakes. If you’d like a little extra sparkle, add edible glitter and powdered sugar to the coconut and mix it well.
- Gently roll each truffle in the coconut mixture until it’s fully coated, pressing lightly to ensure the coconut sticks.
5. Chill Again:
- Place the coated truffles back on the parchment-lined tray and refrigerate them for another 30 minutes to set the coating.
6. Serve and Enjoy:
- Once the Snowy Sapphire Truffles are fully set, serve them on a pretty plate, and enjoy the creamy blueberry filling with the snowy coconut coating.
Tips:
- Flavor Variation: For a different flavor twist, try adding a few drops of lemon or lime zest to the ganache for a citrusy kick that complements the blueberry.
- Storage: Store the truffles in an airtight container in the refrigerator for up to 1-2 weeks.
- Edible Glitter: If you can’t find edible glitter, you can substitute with a light dusting of powdered sugar or a touch of shimmer dust (food-safe).
These Snowy Sapphire Truffles are the perfect blend of creamy, fruity, and festive! They make a stunning addition to any holiday dessert table or gift box, giving off a magical winter vibe.
