This Shamrock Shake Pie is a delicious, no-bake dessert that combines the minty, creamy flavors of the classic Shamrock Shake with a pie form! A dreamy green mint filling rests in a crunchy chocolate crust, making it the perfect treat for St. Patrick’s Day or any time you’re craving a cool, minty dessert.
Ingredients:
For the Crust:
- 1 ½ cups chocolate wafer crumbs (or Oreo crumbs)
- ½ cup unsalted butter, melted
- 2 tbsp granulated sugar
For the Filling:
- 8 oz cream cheese, softened
- 1 ½ cups powdered sugar
- 1 cup heavy whipping cream
- ½ cup peppermint extract (or mint chocolate chip ice cream flavoring)
- Green food coloring (a few drops, optional, for the classic green color)
- 1 tsp vanilla extract
- 2 cups whipped topping (like Cool Whip)
For Garnish:
- Whipped cream (optional)
- Green sprinkles or chocolate shavings (optional)
- Maraschino cherries (optional)
Instructions:
1. Prepare the Crust:
- Preheat your oven to 350°F (175°C).
- In a medium bowl, combine the chocolate wafer crumbs, melted butter, and sugar. Stir until everything is well mixed and the crumbs are evenly coated with butter.
- Press the mixture into the bottom and sides of a 9-inch pie dish to form the crust. Use the back of a spoon to compact it tightly.
- Bake the crust for 8-10 minutes, or until it’s slightly firm to the touch. Remove from the oven and allow to cool completely.
2. Make the Filling:
- In a large mixing bowl, beat the softened cream cheese and powdered sugar together until smooth and creamy.
- In a separate bowl, beat the heavy whipping cream until stiff peaks form.
- Gently fold the whipped cream into the cream cheese mixture, being careful not to deflate the whipped cream.
- Add the peppermint extract, vanilla extract, and a few drops of green food coloring (if using). Mix until fully incorporated and the filling is a light green color.
3. Assemble the Pie:
- Once the crust has cooled, pour the minty cream cheese filling into the crust. Spread it evenly and smooth the top with a spatula.
- Refrigerate the pie for at least 4 hours, or until it is set and firm.
4. Garnish and Serve:
- Before serving, top the pie with whipped cream, green sprinkles, chocolate shavings, and maraschino cherries for a festive touch (optional).
- Slice and enjoy!
Tips:
- Make Ahead: This pie can be made a day in advance, allowing the flavors to meld together and the filling to set up perfectly.
- Substitute the Crust: If you prefer, you can use a graham cracker crust instead of the chocolate crust for a lighter flavor.
- Adjust Mint Flavor: If you like a stronger mint flavor, feel free to add a bit more peppermint extract, or you can use mint chocolate chip ice cream flavoring for extra depth.
This Shamrock Shake Pie is the perfect dessert for celebrating St. Patrick’s Day or anytime you’re in the mood for a minty, creamy treat!
