Homemade Baked Mac and Cheese

Ingredients:

For the Pasta:

  • 1 lb (16 oz) elbow macaroni or your favorite pasta shape
  • 1 tbsp salt (for boiling water)

For the Cheese Sauce:

  • 4 tbsp (½ stick) unsalted butter
  • 4 tbsp all-purpose flour
  • 4 cups whole milk (or a mix of milk and cream for extra richness)
  • 2 tsp Dijon mustard (optional, for depth of flavor)
  • 1 tsp garlic powder
  • ½ tsp paprika (optional)
  • Salt and pepper to taste
  • 2 cups sharp cheddar cheese, shredded
  • 1 cup mozzarella or Monterey Jack cheese, shredded
  • ½ cup Parmesan cheese, grated

For the Topping:

  • 1 cup panko breadcrumbs
  • 2 tbsp unsalted butter, melted
  • ¼ cup Parmesan cheese, grated

Instructions:

1. Cook the Pasta:
  • Preheat your oven to 375°F (190°C).
  • Bring a large pot of salted water to a boil. Cook the pasta until al dente according to package instructions. Drain and set aside.

2. Make the Cheese Sauce:
  • In a large saucepan, melt the butter over medium heat.
  • Whisk in the flour and cook for 1-2 minutes, stirring constantly, to create a roux.
  • Gradually whisk in the milk, ensuring no lumps form. Bring to a gentle simmer and cook until thickened, about 3-5 minutes.
  • Stir in Dijon mustard, garlic powder, paprika, salt, and pepper.
  • Remove from heat and mix in the cheddar, mozzarella, and Parmesan cheeses until melted and smooth.

3. Combine Pasta and Sauce:
  • Add the cooked pasta to the cheese sauce and stir to coat evenly.

4. Assemble the Dish:
  • Transfer the mac and cheese to a greased 9×13-inch baking dish.

5. Prepare the Topping:
  • In a small bowl, combine panko breadcrumbs, melted butter, and Parmesan cheese. Sprinkle evenly over the mac and cheese.

6. Bake:
  • Bake in the preheated oven for 20-25 minutes, or until the topping is golden brown and the cheese is bubbling.
