Ingredients:
For the Pasta:
- 1 lb (16 oz) elbow macaroni or your favorite pasta shape
- 1 tbsp salt (for boiling water)
For the Cheese Sauce:
- 4 tbsp (½ stick) unsalted butter
- 4 tbsp all-purpose flour
- 4 cups whole milk (or a mix of milk and cream for extra richness)
- 2 tsp Dijon mustard (optional, for depth of flavor)
- 1 tsp garlic powder
- ½ tsp paprika (optional)
- Salt and pepper to taste
- 2 cups sharp cheddar cheese, shredded
- 1 cup mozzarella or Monterey Jack cheese, shredded
- ½ cup Parmesan cheese, grated
For the Topping:
- 1 cup panko breadcrumbs
- 2 tbsp unsalted butter, melted
- ¼ cup Parmesan cheese, grated
Instructions:
1. Cook the Pasta:
- Preheat your oven to 375°F (190°C).
- Bring a large pot of salted water to a boil. Cook the pasta until al dente according to package instructions. Drain and set aside.
2. Make the Cheese Sauce:
- In a large saucepan, melt the butter over medium heat.
- Whisk in the flour and cook for 1-2 minutes, stirring constantly, to create a roux.
- Gradually whisk in the milk, ensuring no lumps form. Bring to a gentle simmer and cook until thickened, about 3-5 minutes.
- Stir in Dijon mustard, garlic powder, paprika, salt, and pepper.
- Remove from heat and mix in the cheddar, mozzarella, and Parmesan cheeses until melted and smooth.
3. Combine Pasta and Sauce:
- Add the cooked pasta to the cheese sauce and stir to coat evenly.
4. Assemble the Dish:
- Transfer the mac and cheese to a greased 9×13-inch baking dish.
5. Prepare the Topping:
- In a small bowl, combine panko breadcrumbs, melted butter, and Parmesan cheese. Sprinkle evenly over the mac and cheese.
6. Bake:
- Bake in the preheated oven for 20-25 minutes, or until the topping is golden brown and the cheese is bubbling.
Tips:
- Cheese Choice: Mix and match cheeses for unique flavors—Gruyère, Fontina, or Havarti work wonderfully!
- Add-ins: Stir in cooked bacon, caramelized onions, or roasted veggies for a twist.
- Make Ahead: Assemble the mac and cheese, cover, and refrigerate. Add the topping just before baking.
Serve hot and enjoy the gooey, cheesy goodness!
