For the Cookie Dough Layer:
- 1 cup unsalted butter, softened
- 1 cup light brown sugar, packed
- 1/2 cup granulated sugar
- 1/4 cup milk
- 2 tsp vanilla extract
- 2 cups all-purpose flour (heat-treated for safety)
- 1/2 tsp salt
- 1 and 1/2 cups mini chocolate chips
For the Chocolate Ganache:
- 1/2 cup heavy cream
- 6 oz semi-sweet chocolate, chopped
- 1 tbsp unsalted butter (optional, for shine)
Instructions:
Step 1: Prepare the Brownie Layers
- Preheat your oven to 350°F (175°C). Grease and line two 9-inch round cake pans with parchment paper.
- In a microwave-safe bowl, melt the butter and chopped chocolate in 30-second intervals, stirring until smooth. Let it cool slightly.
- Whisk in the sugar, eggs, and vanilla extract until smooth.
- Sift in the flour, cocoa powder, and salt, and gently fold the mixture until just combined.
- Divide the batter evenly between the prepared pans and bake for 20-25 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
- Let the brownies cool completely in the pans before removing.
Step 2: Make the Cookie Dough Layer
- In a large bowl, beat the softened butter, brown sugar, and granulated sugar until light and fluffy.
- Add the milk and vanilla extract, mixing until smooth.
- Gradually mix in the heat-treated flour and salt, then fold in the mini chocolate chips.
- Spread the cookie dough evenly over one of the brownie layers, forming a thick layer.
Step 3: Assemble the Cake
- Place the second brownie layer on top of the cookie dough layer. Gently press down to secure.
Step 4: Prepare the Ganache
- In a small saucepan, heat the heavy cream until it just begins to simmer (do not boil).
- Remove from heat and pour over the chopped chocolate in a bowl. Let sit for 1-2 minutes, then stir until smooth.
- Stir in the butter for extra shine, if desired.
Step 5: Finish the Cake
- Pour the ganache over the top of the cake, allowing it to drip down the sides.
- Decorate with additional mini chocolate chips, cookie crumbles, or a drizzle of melted chocolate.
Step 6: Chill and Serve
- Refrigerate the cake for at least 1 hour to set.
- Slice and enjoy your rich, decadent Cookie Dough Brownie Cake!
