Chocolate Mora Heaven Cupcakes Recipe

Ingredients:

For the cupcakes:

  • 1 and 3/4 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 and 1/2 cups granulated sugar
  • 1 and 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup boiling water
  • 1/2 cup fresh moras (blackberries), slightly mashed

For the chocolate mora frosting:

  • 1/2 cup unsalted butter, softened
  • 1 cup powdered sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 tsp vanilla extract
  • 1/3 cup heavy cream (more if needed)
  • 1/2 cup fresh moras (blackberries), pureed or mashed

Instructions:

For the cupcakes:

  1. Preheat the oven to 350°F (175°C). Line a 12-cup muffin tin with cupcake liners.
  2. In a large bowl, whisk together the dry ingredients: flour, cocoa powder, sugar, baking powder, baking soda, and salt.
  3. In another bowl, whisk together the wet ingredients: eggs, milk, vegetable oil, and vanilla extract.
  4. Add the wet ingredients to the dry ingredients and mix until combined. Then, add the boiling water (or hot coffee) and mix until smooth. The batter will be thin, but that’s okay!
  5. Gently fold in the mashed moras (blackberries) to distribute them throughout the batter.
  6. Pour the batter evenly into the muffin cups, filling them about 2/3 full.
  7. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Allow the cupcakes to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.

For the frosting:

  1. In a medium bowl, beat together the softened butter and cocoa powder until smooth.
  2. Gradually add the powdered sugar, heavy cream, vanilla extract, and mashed or pureed moras. Mix until smooth and creamy. Adjust the consistency by adding more heavy cream if needed.

Assembling the cupcakes:

  1. Once the cupcakes are completely cooled, frost each one generously with the chocolate mora frosting.
  2. For extra decoration, you can top the cupcakes with fresh moras (blackberries).
  3. Enjoy your indulgent, heavenly chocolate mora cupcakes—perfect for any celebration or treat!

These cupcakes combine the richness of chocolate with the refreshing taste of moras, creating a perfect balance of flavors. Enjoy!
