Inspired by the famous Cherry Garcia ice cream, this Cherry Garcia Fudge is a delightful treat that combines the rich, creamy texture of chocolate fudge with the sweet, tart flavor of cherries and a hint of vanilla. With chunks of dark chocolate and dried cherries, this fudge is perfect for chocolate lovers looking for a fruity twist!

Ingredients:

  • 1 can (14 oz) sweetened condensed milk
  • 2 cups semi-sweet chocolate chips
  • 1 tsp vanilla extract
  • 1 cup dried cherries (or maraschino cherries, chopped)
  • ½ cup dark chocolate chunks or chips
  • 1 tbsp unsalted butter (optional, for creaminess)

Instructions:

1. Prepare the Pan:
  • Line an 8×8-inch square baking pan with parchment paper or aluminum foil, leaving a slight overhang on the sides for easy removal later.
2. Melt the Chocolate:
  • In a medium saucepan over medium heat, combine the sweetened condensed milk, semi-sweet chocolate chips, and butter (if using). Stir constantly until the chocolate is completely melted and the mixture is smooth.
  • Remove from heat and stir in the vanilla extract.
3. Mix in the Cherries and Chocolate Chunks:
  • Add the dried cherries and dark chocolate chunks to the melted fudge mixture, and gently stir to distribute them evenly.
4. Pour into the Pan:
  • Pour the fudge mixture into the prepared pan and spread it evenly using a spatula. Press the mixture down slightly to pack it into the pan.
5. Chill the Fudge:
  • Place the pan in the refrigerator and chill for at least 2-3 hours, or until the fudge is firm and set.
6. Slice and Serve:
  • Once set, remove the fudge from the pan using the parchment paper or foil overhang.
  • Slice into small squares or bars and serve!

Tips:

  • Using Fresh Cherries: If you prefer fresh cherries, make sure to chop them finely and dry them with a paper towel to remove excess moisture.
  • Maraschino Cherries: If using maraschino cherries, chop them into small pieces and drain well to avoid excess liquid in the fudge.
  • Make Ahead: This fudge can be made up to a week in advance and stored in an airtight container in the refrigerator.

This Cherry Garcia Fudge is a sweet and creamy treat with a fruity twist that will satisfy both chocolate and cherry lovers alike!
