Baileys Cheesecake Recipe
Ingredients (Serves 10-12):
For the Crust:
- 2 cups crushed chocolate graham crackers or Oreo cookies (about 20 cookies)
- 1/4 cup unsalted butter, melted

- 24 oz (3 blocks) cream cheese, softened
- 1 cup granulated sugar
- 1/4 cup brown sugar
- 3 large eggs
- 1/2 cup sour cream
- 1/4 cup heavy cream
- 1/2 cup Baileys Irish Cream
- 1 tsp vanilla extract
- 2 tbsp all-purpose flour
For the Baileys Ganache (Optional Topping):
- 1/2 cup semi-sweet chocolate chips
- 1/4 cup heavy cream
- 2 tbsp Baileys Irish Cream
For Garnish (Optional):
- Whipped cream
- Chocolate shavings or cocoa powder
Instructions:
Step 1: Prepare the Crust
- Preheat your oven to 325°F (160°C).
- Mix the crushed chocolate cookies with melted butter until the mixture resembles wet sand.
- Press the mixture evenly into the bottom of a 9-inch springform pan. Use the back of a spoon to pack it tightly.
- Bake for 8-10 minutes, then set aside to cool.
Step 2: Make the Cheesecake Filling
- In a large bowl, beat the cream cheese until smooth and creamy, about 2 minutes.
- Add the granulated sugar and brown sugar, and mix until combined.
- Beat in the eggs, one at a time, mixing well after each addition.
- Add the sour cream, heavy cream, Baileys, and vanilla extract, and mix until smooth.
- Sprinkle in the flour and mix just until incorporated (don’t overmix).
Step 3: Assemble and Bake
- Pour the cheesecake batter over the cooled crust, spreading it evenly.
- Wrap the bottom of the springform pan in aluminum foil to prevent leaks, and place it in a larger baking pan.
- Fill the larger pan with hot water until it reaches halfway up the sides of the springform pan (this is a water bath to prevent cracks).
- Bake for 60-70 minutes, or until the edges are set and the center is slightly jiggly.
- Turn off the oven and let the cheesecake cool inside the oven with the door slightly ajar for 1 hour.
Step 4: Make the Baileys Ganache (Optional)
- In a microwave-safe bowl, heat the heavy cream until it begins to simmer (about 30 seconds).
- Pour the hot cream over the chocolate chips and let sit for 1-2 minutes, then stir until smooth.
- Stir in the Baileys Irish Cream. Let the ganache cool slightly before pouring it over the cheesecake.
Step 5: Chill and Serve
- Refrigerate the cheesecake for at least 4 hours (preferably overnight) to set completely.
