Baileys Cheesecake Recipe

  • 24 oz (3 blocks) cream cheese, softened
  • 1 cup granulated sugar
  • 1/4 cup brown sugar
  • 3 large eggs
  • 1/2 cup sour cream
  • 1/4 cup heavy cream
  • 1/2 cup Baileys Irish Cream
  • 1 tsp vanilla extract
  • 2 tbsp all-purpose flour

  • 1/4 cup heavy cream
  • 2 tbsp Baileys Irish Cream

Instructions:

Step 1: Prepare the Crust

  1. Preheat your oven to 325°F (160°C).
  2. Mix the crushed chocolate cookies with melted butter until the mixture resembles wet sand.
  3. Press the mixture evenly into the bottom of a 9-inch springform pan. Use the back of a spoon to pack it tightly.
  4. Bake for 8-10 minutes, then set aside to cool.

Step 2: Make the Cheesecake Filling

  1. In a large bowl, beat the cream cheese until smooth and creamy, about 2 minutes.
  2. Add the granulated sugar and brown sugar, and mix until combined.
