This Strawberry Swirl Ice Cream is a refreshing, creamy treat with ribbons of sweet strawberry sauce throughout. Made with fresh strawberries and a luscious creamy base, it’s a perfect summer indulgence!

Ingredients

For the Strawberry Swirl:

  • 2 cups fresh strawberries, hulled and chopped
  • 1/2 cup granulated sugar
  • 1 tbsp lemon juice

For the Ice Cream Base:

  • 2 cups heavy cream
  • 1 cup whole milk
  • 3/4 cup granulated sugar
  • 1 tbsp vanilla extract
  • Pinch of salt

Instructions

1. Make the Strawberry Swirl:

  1. In a medium saucepan, combine the chopped strawberries, sugar, and lemon juice.
  2. Cook over medium heat, stirring occasionally, until the strawberries break down and the mixture thickens (about 10 minutes).
  3. Mash the strawberries with a spoon or potato masher, leaving some chunks for texture.
  4. Remove from heat and let it cool completely. Once cooled, strain to remove seeds if desired. Set aside.

2. Prepare the Ice Cream Base:

  1. In a large bowl, whisk together the heavy cream, milk, sugar, vanilla extract, and a pinch of salt until the sugar is dissolved and the mixture is smooth.
  2. If you have an ice cream maker, pour the mixture into it and churn according to the manufacturer’s instructions (usually about 20-25 minutes).
  3. If you don’t have an ice cream maker, pour the mixture into a shallow dish and freeze for about 4-6 hours, stirring every 30 minutes to prevent ice crystals from forming.

3. Swirl the Strawberry Sauce:

  1. Once the ice cream base is churned or partially frozen, gently swirl the strawberry sauce into the ice cream. Use a spoon or spatula to create ribbons of strawberry swirl throughout the ice cream.
  2. Transfer the ice cream into an airtight container and freeze for 2-3 hours or until fully set.

4. Serve:

  • Scoop the Strawberry Swirl Ice Cream into bowls or cones, and enjoy this creamy, fruity treat on a warm day!

Tips:

  • For Extra Texture: Add small chunks of fresh strawberries to the ice cream base before churning or freezing.
  • No Ice Cream Maker?: If you don’t have an ice cream maker, the freezing method works great. Just be sure to stir it every 30 minutes to prevent icy lumps.
  • Make It Lighter: You can substitute some of the heavy cream with Greek yogurt for a tangy, lighter version.

This Strawberry Swirl Ice Cream is a perfect way to cool off and indulge in the fresh, fruity flavors of summer!
