This Moist Coffee Cake is the perfect treat for any coffee lover! With a tender crumb, a cinnamon-sugar swirl, and a crumbly streusel topping, it’s the ideal pairing with a warm cup of coffee or tea.
Ingredients
For the Cake:
- 2 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 tsp ground cinnamon
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 cup sour cream or plain yogurt
For the Cinnamon Sugar Swirl:
- 1/2 cup brown sugar, packed
- 1 tbsp ground cinnamon
For the Streusel Topping:
- 1/2 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/4 cup unsalted butter, cold and cubed
- 1/2 tsp ground cinnamon
Instructions
1. Prepare the Streusel Topping:
- In a medium bowl, combine the flour, sugar, and cinnamon for the streusel.
- Add the cold cubed butter and mix with your fingers or a pastry cutter until the mixture becomes crumbly. Set aside.
2. Make the Cinnamon Sugar Swirl:
- In a small bowl, mix together the brown sugar and cinnamon for the swirl. Set aside.
3. Prepare the Cake Batter:
- Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round or square cake pan.
- In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the eggs, one at a time, followed by the vanilla extract.
- Add the dry ingredients in three parts, alternating with the sour cream, beginning and ending with the dry ingredients. Mix until just combined.
4. Assemble the Cake:
- Pour half of the batter into the prepared cake pan and smooth the top.
- Sprinkle half of the cinnamon-sugar mixture over the batter.
- Add the remaining batter on top and smooth again.
- Sprinkle the remaining cinnamon-sugar swirl over the top of the batter.
- Add the streusel topping evenly over the top.
5. Bake the Cake:
- Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted into the center of the cake comes out clean.
6. Cool and Serve:
- Let the cake cool in the pan for 10-15 minutes, then transfer to a wire rack to cool completely.
- Slice and serve with your favorite coffee or tea.
