This Mango Ice Cream is a tropical delight, made with fresh, juicy mangoes and a creamy, smooth base. It’s a perfect treat to enjoy on a hot day or whenever you want to feel like you’re on vacation!


Ingredients

For the Ice Cream Base:

  • 2 cups heavy cream
  • 1 cup whole milk
  • 3/4 cup granulated sugar

  • 2 large ripe mangoes, peeled, pitted, and chopped
  • 2 tbsp lemon juice

Instructions

1. Make the Mango Puree:

  1. In a blender or food processor, combine the mango chunks, lemon juice, and honey (if using).
  2. Blend until smooth and creamy. Taste and adjust sweetness by adding more honey if needed.
  3. Set aside the mango puree.

2. Prepare the Ice Cream Base:

  1. In a medium bowl, whisk together the heavy cream, whole milk, sugar, vanilla extract, and a pinch of salt until the sugar dissolves and the mixture is smooth.
  2. Pour the mango puree into the cream mixture and stir well to combine.

3. Churn the Ice Cream:

  1. If you have an ice cream maker, pour the mixture into the machine and churn according to the manufacturer’s instructions (usually about 20-25 minutes).
  2. If you don’t have an ice cream maker, pour the mixture into a shallow dish and place it in the freezer. After 30 minutes, stir the mixture with a fork to break up any ice crystals. Repeat every 30 minutes for about 3-4 hours until the ice cream is smooth and set.

4. Freeze and Serve:

  1. Once churned or frozen to your desired consistency, transfer the mango ice cream to an airtight container.
  2. Freeze for 2-3 hours to firm up before serving.

5. Serve:

  • Scoop the Mango Ice Cream into bowls or cones and enjoy the creamy, tropical goodness!

Tips:

  • Make It Extra Creamy: For an even creamier texture, you can substitute some of the heavy cream with coconut cream for a coconut-mango flavor combo.
  • Sweetness: Adjust the sweetness based on the ripeness of your mangoes. If your mangoes are very sweet, you can reduce the sugar in the ice cream base.
  • No Ice Cream Maker?: Just freeze and stir every 30 minutes as mentioned above to avoid ice crystals.
