Ingredients
For the Cake Base:
- 1 box (about 15 oz) of chocolate cake mix (or your favorite homemade chocolate cake recipe)
- Ingredients required for cake mix (usually eggs, oil, and water)
For the Cookie Dough Layer:
- 1/2 cup unsalted butter, softened
- 1/2 cup brown sugar, packed
- 1/4 cup granulated sugar
- 1 tsp vanilla extract
- 1 1/2 cups all-purpose flour (baked for 5 minutes at 350°F to kill any bacteria)
- 1/4 tsp salt
- 1/2 cup mini chocolate chips
- 1-2 tbsp milk (for consistency)
For the Ice Cream Layer:
- 1 quart vanilla ice cream (or any ice cream flavor you prefer)
For the Whipped Cream Topping:
- 1 cup heavy cream
- 2 tbsp powdered sugar
- 1 tsp vanilla extract
Instructions
1. Prepare the Cake Base:
- Preheat the oven to 350°F (175°C).
- Grease and line an 8-inch or 9-inch round cake pan.
- Prepare the cake mix according to the package directions (usually requiring eggs, oil, and water).
- Pour the cake batter into the prepared cake pan and bake according to the package directions, usually for about 25-30 minutes.
- Once baked, remove the cake from the oven and allow it to cool completely. You can even freeze it to speed up the process.
2. Make the Cookie Dough Layer:
- In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth.
- Add the vanilla extract and mix.
- Gradually add the flour and salt, mixing until fully combined.
- Stir in the mini chocolate chips. If the dough feels too dry, add a tablespoon or two of milk to reach a dough-like consistency.
- Once the cookie dough is ready, flatten it into a round layer the size of your cake. Set aside.
3. Assemble the Cake:
- Once the cake is completely cool, place it on a serving platter or cake stand.
- If you want, you can trim the cake’s edges to make it a perfect circle.
- Place the cookie dough layer directly on top of the cooled cake. Press gently to ensure it sticks.
- Soften the vanilla ice cream slightly by letting it sit out for a few minutes, then spread the ice cream evenly over the cookie dough layer.
- Cover the entire cake with a layer of plastic wrap or foil and freeze for at least 3 hours or until firm.
4. Prepare the Whipped Cream Topping:
- In a mixing bowl, whip the heavy cream with powdered sugar and vanilla extract until stiff peaks form.
- Once the cake is set, remove it from the freezer and top with the whipped cream. You can spread it on top or pipe it into decorative swirls.
5. Decorate and Serve:
- For extra flair, sprinkle additional mini chocolate chips or even chunks of cookie dough on top of the whipped cream.
- Slice and serve the Cookie Dough Ice Cream Cake—you’ll love the layers of cake, cookie dough, and ice cream in every bite!
Tips:
- Customizable Ice Cream Flavor: Use any ice cream flavor you like! Chocolate, cookies and cream, or even caramel would be amazing with the cookie dough.
- Storage: Store leftovers in an airtight container in the freezer. This cake keeps well for up to a week.
- For a Crunch: Add crushed chocolate cookies or even crushed nuts to the ice cream layer for an extra crunch.
This Cookie Dough Ice Cream Cake is an indulgent treat that will satisfy all your dessert cravings with its combination of cake, cookie dough, and ice cream!
