Ingredients:

For the Crust:

  • 1 1/2 cups crushed graham crackers (or digestive biscuits)
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted

For the Cheesecake Filling:

  • 3 (8 oz) packages cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups heavy whipping cream
  • 1/4 cup caramel sauce (plus extra for drizzling)
  • 1 1/2 cups Twix bars, chopped into small pieces (reserve some for topping)

For the Topping:

  • 1/4 cup caramel sauce (for drizzling)
  • 1/2 cup chopped Twix bars

Instructions:

1. Make the Crust

  1. In a medium bowl, combine the crushed graham crackers, sugar, and melted butter. Stir until the mixture is well combined and the crumbs are coated.
  2. Press the crust mixture into the bottom of a 9-inch springform pan or pie dish, making an even layer. Use the back of a spoon to press it down firmly.
  3. Refrigerate the crust for at least 30 minutes to firm up.

2. Make the Cheesecake Filling

  1. In a large mixing bowl, beat the softened cream cheese with a hand mixer or stand mixer until smooth and creamy.
  2. Add the powdered sugar and vanilla extract, and beat again until combined.
  3. In a separate bowl, whip the heavy cream until stiff peaks form. You can do this using a hand mixer or stand mixer.
  4. Gently fold the whipped cream into the cream cheese mixture until fully combined.
  5. Stir in the caramel sauce and chopped Twix bars (reserve some chopped Twix for topping).

3. Assemble the Cheesecake

  1. Pour the cheesecake filling over the chilled crust and smooth it into an even layer with a spatula.
  2. Refrigerate the cheesecake for at least 4 hours or overnight for best results, to allow it to set.

4. Top the Cheesecake

  1. Before serving, drizzle the cheesecake with caramel sauce and sprinkle the remaining chopped Twix bars on top for decoration.

5. Serve

  1. Slice and serve chilled. Enjoy this creamy, crunchy Twix cheesecake!
