Ingredients

  • 1 1/2 cups (360ml) unsweetened applesauce

  • 1 tbsp water

Instructions

1. Prepare the Ingredients

  1. Preheat your oven to 325°F (165°C). Grease and flour a 9-inch (23cm) round or square cake pan, or line with parchment paper.
  2. In a small bowl, combine the dried fruits, nuts, and candied ginger (and pineapple if using). Lightly toss them in a tablespoon of flour to coat. This helps prevent the fruits and nuts from sinking to the bottom of the cake. Set aside.

  1. In a large mixing bowl, cream together the softened butter and brown sugar until light and fluffy.
