This Applesauce Fruitcake is a wonder
Ingredients
For the Cake:
- 1 1/2 cups (360ml) unsweetened applesauce
- 1/2
- 1 cup (200g) brown sugar, packed
- 3 large eggs

- 1 tsp baking soda
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/2 tsp ground allspice
- 1 cup (150g) mixed dried fruits (grapes, currants, chopped dried apricots, etc.)
- 1 cup (150g) mixed nuts (walnuts, pecans, almonds, chopped)
- 1/2 cup (75g) candied ginger, finely chopped
- 1/2 cup (60g) chopped crystallized pineapple (optional)
For the Glaze (Optional):
- 2 tbsp honey or maple syrup
- 1 tbsp water
Instructions
1. Prepare the Ingredients
- Preheat your oven to 325°F (165°C). Grease and flour a 9-inch (23cm) round or square cake pan, or line with parchment paper.
- In a small bowl, combine the dried fruits, nuts, and candied ginger (and pineapple if using). Lightly toss them in a tablespoon of flour to coat. This helps prevent the fruits and nuts from sinking to the bottom of the cake. Set aside.
2. Make the Cake Batter
- In a large mixing bowl, cream together the softened butter and brown sugar until light and fluffy.
- Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract and applesauce until well combined
