This colorful and flavorful Tutti Frutti Cake is a delightful treat fill
Ingredients
For the Cake Batter:
- 1 1/2 cups (1
- 1 tsp baking powder
- 1/4 t
- 1/4 tsp salt
- 1/2 cup (120g) unsalted butter, softened
- 3/4 cup (150g) granulated sugar
- 2 large eggs
- 1/2 cup (120ml) milk (room temperature)
- 1 tsp vanilla extract
- 1/2 cup (80g) tutti frutti (candied fruit)
- 2 tbsp all-purpose flour (for coating the tutti frutti)
Instructions
1. Prepare the Tutti Frutti
- In a small bowl, toss the tutti frutti with 2 tablespoons of flour. This prevents the candied fruit from sinking to the bottom of the cake while baking. Set aside.
2. Preheat and Prepare the Pan
- Preheat your oven to 350°F (175°C).
- Grease and flour a loaf pan or an 8-inch round cake pan. Line the bottom with parchment paper for easy removal.
3. Mix the Dry Ingredients
- In a medium bowl, sift together the flour, baking powder, baking soda, and salt. Set aside.
4. Make the Batter
- In a large bowl, cream the butter and sugar with a hand mixer or stand mixer until light and fluffy (about 3-4 minutes).
- Beat in the eggs, one at a time, followed by the vanilla extract. Mix until smooth.
- Gradually add the dry ingredients to the wet mixture, alternating with the milk, starting and ending with the dry ingredients. Mix until just combined—do not overmix.
- Gently fold in the tutti frutti.
5. Bake the Cake
- Pour the batter into the prepared pan and smooth the top with a spatula.
