This colorful and flavorful Tutti Frutti Cake is a delightful treat fill


Ingredients

For the Cake Batter:

  • 1 1/2 cups (1

  • 3/4 cup (150g) granulated sugar
  • 2 large eggs
  • 1/2 cup (120ml) milk (room temperature)

  • 1/2 cup (80g) tutti frutti (candied fruit)
  • 2 tbsp all-purpose flour (for coating the tutti frutti)

Instructions

1. Prepare the Tutti Frutti

  1. In a small bowl, toss the tutti frutti with 2 tablespoons of flour. This prevents the candied fruit from sinking to the bottom of the cake while baking. Set aside.

2. Preheat and Prepare the Pan

  1. Preheat your oven to 350°F (175°C).
  2. Grease and flour a loaf pan or an 8-inch round cake pan. Line the bottom with parchment paper for easy removal.

3. Mix the Dry Ingredients

  1. In a medium bowl, sift together the flour, baking powder, baking soda, and salt. Set aside.

4. Make the Batter

  1. In a large bowl, cream the butter and sugar with a hand mixer or stand mixer until light and fluffy (about 3-4 minutes).
  2. Beat in the eggs, one at a time, followed by the vanilla extract. Mix until smooth.
  3. Gradually add the dry ingredients to the wet mixture, alternating with the milk, starting and ending with the dry ingredients. Mix until just combined—do not overmix.
  4. Gently fold in the tutti frutti.

5. Bake the Cake

  1. Pour the batter into the prepared pan and smooth the top with a spatula.
