Instructions:

  1. Prepare the Cake:
    • Preheat the oven to 180°C (350°F). Line a 10×15-inch jelly roll pan with parchment paper.
    • Beat the eggs and sugar together on high speed until pale, thick, and tripled in volume (about 5 minutes).
    • Sift together the flour, cocoa powder, baking powder, and salt. Gently fold the dry ingredients into the egg mixture in three parts. Add vanilla extract and mix just until combined.

    • Unroll the cooled cake. Spread the whipped cream filling evenly over the surface. Re-roll the cake without the towel, keeping it tight but gentle.
