Triple Chocolate Mousse Torte Recipe
This decadent torte layers dark, milk, and white chocolate mousses for a show-stopping dessert that’s as rich as it is beautiful. Perfect for special occasions!
Ingredients
For the Base
- 200g (7 oz) chocolate cookies or biscuits (e.g., Oreos, digestives)
- 75g (1/3 cup) unsalted butter, melted
For the Dark Chocolate Mousse
- 200g (7 oz) dark chocolate, chopped
- 300ml (1 1/4 cups) heavy cream, cold
- 2 large egg yolks (optional, for richness)
- 2 tablespoons sugar
For the Milk Chocolate Mousse
- 200g (7 oz) milk chocolate, chopped
- 300ml (1 1/4 cups) heavy cream, cold
For the White Chocolate Mousse
- 200g (7 oz) white chocolate, chopped
- 300ml (1 1/4 cups) heavy cream, cold

Instructions
Step 1: Prepare the Base
- Crush the cookies into fine crumbs using a food processor or rolling pin.
- Mix the crumbs with the melted butter until well combined.
- Press the mixture into the bottom of a springform pan (22-23cm/9 inches) lined with parchment paper.
- Refrigerate while you prepare the mousses.
Step 2: Make the Dark Chocolate Mousse
- Melt the dark chocolate gently in a heatproof bowl over simmering water (or in the microwave in short bursts). Let it cool slightly.
- If using egg yolks, whisk them with sugar until pale and thick. Fold into the melted chocolate.
- Whip the heavy cream to soft peaks and fold it into the chocolate mixture.
- Spread the mousse over the chilled base and refrigerate for 30 minutes.
Step 3: Make the Milk Chocolate Mousse
- Repeat the process as above, melting the milk chocolate and folding it with whipped cream (no egg yolks needed).
- Spread over the dark chocolate mousse layer and refrigerate for another 30 minutes.
Step 4: Make the White Chocolate Mousse
- Repeat the process with the white chocolate.
- Spread the white chocolate mousse over the milk chocolate layer and smooth the top.
- Refrigerate for at least 4 hours, or overnight, to set completely.
Step 5: Garnish and Serve
- Carefully remove the torte from the springform pan.
- Garnish with chocolate shavings, a dusting of cocoa powder, or fresh berries.
- Slice with a sharp, warm knife for clean layers.
