  • 1 cup heavy whipping cream, divided

For Garnish

  • Chocolate shavings, curls, or cocoa powder
  • Whipped cream (optional)

Instructions

Step 1: Prepare the Base Layer

  1. Preheat the oven to 350°F (175°C) and grease a 9-inch springform pan.
  2. In a bowl, mix melted butter and sugar until smooth. Add eggs and vanilla, mixing well.
  3. Sift in flour, cocoa powder, and salt. Mix until just combined.
  4. Pour the batter into the prepared pan and spread evenly.
  5. Bake for 20–25 minutes, or until a toothpick comes out with a few moist crumbs. Let cool completely.

Step 2: Make the Mousse Layers

Dark Chocolate Mousse

  1. Melt dark chocolate in a heatproof bowl over a pot of simmering water (double boiler method). Let cool slightly.
  2. Whip 3/4 cup of heavy cream to soft peaks.
  3. Heat the remaining 1/4 cup of cream until hot (not boiling). Stir it into the melted chocolate until smooth.
  4. Fold in the whipped cream gently until combined. Spread over the cooled base and refrigerate for 30 minutes.

Milk Chocolate Mousse

  1. Repeat the steps above using milk chocolate.
  2. Spread the milk chocolate mousse evenly over the dark chocolate layer and refrigerate for another 30 minutes.

White Chocolate Mousse

  1. Repeat the steps above using white chocolate.
  2. Spread the white chocolate mousse evenly on top.

Step 3: Chill and Garnish

  1. Refrigerate the entire torte for at least 4–6 hours, or until fully set.
  2. Remove from the springform pan carefully.
  3. Garnish with chocolate shavings, curls, or a dusting of cocoa powder. Add whipped cream rosettes for extra flair if desired.

Tips for Perfection

  • Chocolate Quality: Use high-quality chocolate for the best flavor.
  • Stabilized Mousse: If you need a firmer mousse, dissolve 1 teaspoon of unflavored gelatin in 1 tablespoon water and mix it into the hot cream for each mousse layer.
  • Serving: Use a hot knife to slice clean, neat pieces.

This luscious, show-stopping torte is guaranteed to wow your guests and satisfy every chocolate craving. Enjoy! 🍫🎂
