  • ½ cup granulated sugar
  • ½ cup brown sugar, packed
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup milk

For the Dark Chocolate Mousse Layer:

  • 6 oz dark chocolate, chopped
  • 1 cup heavy cream, chilled
  • 2 tbsp granulated sugar

For the Milk Chocolate Mousse Layer:

  • 6 oz milk chocolate, chopped
  • 1 cup heavy cream, chilled
  • 2 tbsp granulated sugar

For the White Chocolate Mousse Layer:

  • 6 oz white chocolate, chopped
  • 1 cup heavy cream, chilled
  • 2 tbsp granulated sugar

Optional Toppings:

  • Shaved chocolate or curls
  • Cocoa powder dusting
  • Fresh berries

Instructions

1. Bake the Chocolate Cake Base:

  • Preheat the oven to 350°F (175°C) and grease a 9-inch springform pan.
  • In a bowl, whisk together flour, cocoa powder, baking powder, and salt.
  • In another bowl, beat butter, granulated sugar, and brown sugar until fluffy. Add eggs and vanilla; mix well.
  • Gradually add the dry ingredients, alternating with milk, starting and ending with the dry ingredients.
  • Spread the batter in the pan and bake for 20–25 minutes or until a toothpick comes out clean.
  • Let the cake cool completely in the pan.

2. Prepare the Mousse Layers:

  • For each mousse layer:
    1. Melt the chocolate in a heatproof bowl over simmering water or in the microwave (in short intervals, stirring frequently).
    2. Let the melted chocolate cool slightly.
    3. Beat the heavy cream and sugar in a chilled bowl until soft peaks form.
    4. Gently fold the whipped cream into the melted chocolate until smooth.

3. Assemble the Torte:

  • Spread the dark chocolate mousse over the cooled cake base and smooth the surface with a spatula.
  • Chill in the refrigerator for 30 minutes to set.
  • Repeat the process with the milk chocolate mousse and then the white chocolate mousse, chilling between layers to ensure firmness.

4. Chill and Decorate:

  • Once assembled, chill the torte for at least 4 hours or overnight.
  • Before serving, run a warm knife around the edge of the pan and release the springform. Decorate with shaved chocolate, cocoa powder, or berries.

5. Serve:

  • Slice and enjoy this chocolate lover’s dream dessert!
