Instructions
1. Bake the Chocolate Cake Base:
- Preheat the oven to 350°F (175°C) and grease a 9-inch springform pan.
- In a bowl, whisk together flour, cocoa powder, baking powder, and salt.
- In another bowl, beat butter, granulated sugar, and brown sugar until fluffy. Add eggs and vanilla; mix well.
- Gradually add the dry ingredients, alternating with milk, starting and ending with the dry ingredients.
- Spread the batter in the pan and bake for 20–25 minutes or until a toothpick comes out clean.
- Let the cake cool completely in the pan.
2. Prepare the Mousse Layers:
- For each mousse layer:
- Melt the chocolate in a heatproof bowl over simmering water or in the microwave (in short intervals, stirring frequently).
- Let the melted chocolate cool slightly.
- Beat the heavy cream and sugar in a chilled bowl until soft peaks form.
- Gently fold the whipped cream into the melted chocolate until smooth.
3. Assemble the Torte:
- Spread the dark chocolate mousse over the cooled cake base and smooth the surface with a spatula.
- Chill in the refrigerator for 30 minutes to set.
- Repeat the process with the milk chocolate mousse and then the white chocolate mousse, chilling between layers to ensure firmness.
4. Chill and Decorate:
- Once assembled, chill the torte for at least 4 hours or overnight.
- Before serving, run a warm knife around the edge of the pan and release the springform. Decorate with shaved chocolate, cocoa powder, or berries.
