Strawberry Cheesecake Square Bites Dipped in White Chocolate are the perfect blend of creamy cheesecake, fruity strawberry, and indulgent white chocolate. Here’s how to make these bite-sized treats:
Ingredients
For the Cheesecake Base:
- 1 cup graham cracker crumbs (or digestive biscuit crumbs)
- 3 tbsp unsalted butter, melted
- 1 tbsp granulated sugar
For the Cheesecake Filling:
- 16 oz (450g) cream cheese, softened
- ½ cup granulated sugar
- 1 tsp vanilla extract
- 2 large eggs
- ½ cup fresh strawberries, finely chopped or puréed
For the White Chocolate Coating:
- 10–12 oz white chocolate, chopped or white chocolate chips
- 1 tbsp vegetable oil or coconut oil (optional, for smoother coating)
Optional Garnish:
- Crushed freeze-dried strawberries
- Drizzle of dark or milk chocolate
Instructions
1. Prepare the Crust:
- Preheat the oven to 325°F (160°C) and line an 8×8-inch square baking pan with parchment paper, leaving overhang for easy removal.
- Mix graham cracker crumbs, melted butter, and sugar in a bowl until the mixture resembles wet sand.
- Press the mixture firmly into the bottom of the prepared pan. Bake for 8–10 minutes, then set aside to cool.
2. Make the Cheesecake Filling:
- In a bowl, beat the softened cream cheese and sugar until smooth and creamy.
- Add the vanilla extract and eggs one at a time, mixing until just combined.
- Fold in the chopped or puréed strawberries.
- Pour the filling over the cooled crust and spread evenly.
3. Bake the Cheesecake:
- Bake the cheesecake for 30–35 minutes, or until the edges are set but the center is slightly jiggly.
- Cool to room temperature, then refrigerate for at least 4 hours or overnight to fully set.
4. Cut into Bites:
- Remove the cheesecake from the pan using the parchment paper overhang. Trim the edges if desired, then cut into small squares (about 1–1½ inches each).
- Freeze the squares for 30–60 minutes. This makes them easier to dip in chocolate.
5. Dip in White Chocolate:
- Melt the white chocolate and oil (if using) in a heatproof bowl over simmering water or in the microwave in short bursts, stirring frequently.
- Dip each cheesecake square into the melted white chocolate, coating completely. Use a fork to lift them out and let the excess chocolate drip off.
- Place the dipped bites on a parchment-lined baking sheet.
6. Garnish and Set:
- Before the chocolate sets, sprinkle with crushed freeze-dried strawberries or drizzle with additional chocolate for decoration.
- Chill the bites in the refrigerator for 15–20 minutes until the chocolate hardens.
7. Serve and Enjoy:
- Serve these delightful bites chilled. They’re perfect for parties, dessert platters, or as a sweet treat for yourself!
