Mini Key Lime Pies Recipe

Ingredients

For the Crust:

  • 1 ½ cups (150g) graham cracker crumbs
  • ¼ cup (50g) granulated sugar
  • 6 tbsp (85g) unsalted butter, melted
  • A pinch of salt

For the Filling:

  • 2 large egg yolks
  • 1 can (14 oz or 396g) sweetened condensed milk
  • ½ cup (120ml) fresh key lime juice (or regular lime juice)
  • 1 tsp lime zest (optional)

For the Topping:

  • 1 cup (240ml) heavy whipping cream
  • 2 tbsp powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Prepare the Crust:
    • Preheat your oven to 350°F (175°C).
    • In a medium bowl, combine the graham cracker crumbs, sugar, melted butter, and a pinch of salt. Mix until the crumbs are well coated and the mixture holds together when pressed.
    • Press the crumb mixture into the bottoms of a muffin tin (12-cup capacity) or mini tart pans, making sure to cover the bottom and slightly up the sides.
    • Bake for 8-10 minutes, or until the crust is golden. Remove from the oven and let cool while you prepare the filling.
  2. Prepare the Filling:
    • In a mixing bowl, whisk together the egg yolks and sweetened condensed milk until smooth and combined.
    • Add the lime juice and zest (if using), and mix until fully incorporated.
    • Spoon the filling into each cooled crust, dividing it evenly between the mini pie shells.
  3. Bake the Pies:
    • Bake the mini pies for 10-12 minutes, or until the filling is set and slightly firm to the touch.
    • Remove from the oven and let them cool to room temperature. Then refrigerate for at least 2 hours to allow the filling to firm up further.
  4. Make the Whipped Cream Topping:
    • In a chilled bowl, beat the heavy whipping cream with powdered sugar and vanilla extract until soft peaks form.
    • Spoon or pipe the whipped cream onto each mini pie just before serving.
  5. Serve:
    • Garnish with additional lime zest or lime slices if desired.
    • Serve chilled and enjoy!

Storage:

Store mini Key Lime Pies in an airtight container in the refrigerator for up to 3 days. They can also be frozen for up to a month—just be sure to thaw them in the fridge before serving.
