Mini Key Lime Pies Recipe
Ingredients
For the Crust:
- 1 ½ cups (150g) graham cracker crumbs
- ¼ cup (50g) granulated sugar
- 6 tbsp (85g) unsalted butter, melted
- A pinch of salt
For the Filling:
- 2 large egg yolks
- 1 can (14 oz or 396g) sweetened condensed milk
- ½ cup (120ml) fresh key lime juice (or regular lime juice)
- 1 tsp lime zest (optional)
For the Topping:
- 1 cup (240ml) heavy whipping cream
- 2 tbsp powdered sugar
- 1 tsp vanilla extract
Instructions
- Prepare the Crust:
- Preheat your oven to 350°F (175°C).
- In a medium bowl, combine the graham cracker crumbs, sugar, melted butter, and a pinch of salt. Mix until the crumbs are well coated and the mixture holds together when pressed.
- Press the crumb mixture into the bottoms of a muffin tin (12-cup capacity) or mini tart pans, making sure to cover the bottom and slightly up the sides.
- Bake for 8-10 minutes, or until the crust is golden. Remove from the oven and let cool while you prepare the filling.
- Prepare the Filling:
- In a mixing bowl, whisk together the egg yolks and sweetened condensed milk until smooth and combined.
- Add the lime juice and zest (if using), and mix until fully incorporated.
- Spoon the filling into each cooled crust, dividing it evenly between the mini pie shells.
- Bake the Pies:
- Bake the mini pies for 10-12 minutes, or until the filling is set and slightly firm to the touch.
- Remove from the oven and let them cool to room temperature. Then refrigerate for at least 2 hours to allow the filling to firm up further.
- Make the Whipped Cream Topping:
- In a chilled bowl, beat the heavy whipping cream with powdered sugar and vanilla extract until soft peaks form.
- Spoon or pipe the whipped cream onto each mini pie just before serving.
- Serve:
- Garnish with additional lime zest or lime slices if desired.
- Serve chilled and enjoy!
Storage:
Store mini Key Lime Pies in an airtight container in the refrigerator for up to 3 days. They can also be frozen for up to a month—just be sure to thaw them in the fridge before serving.
