- 1 3/4 cups granulated sugar
- 3/4 cup unsweetened cocoa powder
- 2 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp salt
- 1 cup buttermilk
- 1/2 cup vegetable oil
- 2 large eggs
- 2 tsp vanilla extract
- 1 cup hot water or coffee
Caramel Filling
- 1 cup caramel sauce (store-bought or homemade)
- 1/2 cup toasted pecans, chopped
Chocolate Frosting
- 1 cup unsalted butter, softened
- 3 cups powdered sugar
- 3/4 cup unsweetened cocoa powder
- 1/2 cup heavy cream
- 1 tsp vanilla extract
Topping
- 1/2 cup caramel sauce (for drizzling)
- 1/2 cup toasted pecans, halved or chopped
- 1/4 cup chocolate chips, melted (optional for drizzle)
Instructions
1. Bake the Cake
- Preheat your oven to 350°F (175°C). Grease and line two 9-inch round cake pans.
- In a large bowl, sift together the flour, sugar, cocoa powder, baking soda, baking powder, and salt.
- Add buttermilk, oil, eggs, and vanilla extract. Beat on medium speed until smooth.
- Slowly mix in the hot water or coffee. The batter will be thin—this ensures a moist cake.
- Divide the batter evenly between the prepared pans. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
- Cool the cakes in the pans for 10 minutes, then transfer to a wire rack to cool completely.
2. Prepare the Frosting
- Beat softened butter until creamy.
- Add powdered sugar and cocoa powder gradually, beating on low speed.
- Add heavy cream and vanilla, then beat on high speed for 2-3 minutes until light and fluffy.
3. Assemble the Cake
- Place one cake layer on a serving plate. Spread a thin layer of chocolate frosting on top.
- Spread half of the caramel sauce over the frosting and sprinkle with half of the toasted pecans.
- Add the second cake layer and frost the entire cake with the chocolate frosting.
4. Add the Toppings
- Drizzle the remaining caramel sauce over the top, letting it drip down the sides.
- Sprinkle the top with the remaining toasted pecans.
- For an extra touch, drizzle melted chocolate over the top.
5. Serve
- Slice and enjoy this decadent cake with a glass of milk or coffee.
Tips
- Toast the pecans: To bring out their flavor, toast pecans on a baking sheet at 350°F for 5-7 minutes, stirring occasionally.
- Storage: Store the cake in the refrigerator for up to 5 days. Let it come to room temperature before serving for the best flavor and texture.
- Make it extra luxurious: Add a layer of ganache between the cake layers for an even richer dessert.
This Chocolate Caramel Pecan Cake is the epitome of indulgence, perfect for turning any gathering into a celebration! 🍫🍮🌰
