Ingredients

For the Crust:

  • 1 tbsp lemon juice

Instructions

1. Prepare the Crust:

  • Preheat the oven to 325°F (163°C).
  • In a bowl, combine graham cracker crumbs, sugar, and melted butter. Stir until the crumbs are evenly coated.
  • Press the mixture into the bottom of a 9-inch springform pan to form a crust. Bake for 10 minutes. Remove from the oven and let it cool while you prepare the filling.

2. Make the Cheesecake Filling:

  • In a large mixing bowl, beat the softened cream cheese and sugar until smooth and creamy, about 3 minutes.
  • Add vanilla extract and beat in the eggs one at a time, mixing until smooth after each addition.
  • Stir in sour cream, flour, and heavy cream, mixing until fully combined.
  • Pour the cheesecake mixture into the cooled crust in the springform pan.

3. Bake the Cheesecake:

  • Bake for 50–60 minutes, or until the center is almost set but still slightly jiggly. If the edges are browning too quickly, cover the top with foil.
  • Turn off the oven and let the cheesecake cool in the oven with the door slightly ajar for 1 hour.
  • Afterward, refrigerate the cheesecake for at least 4 hours or overnight to set fully.

4. Prepare the Strawberry Topping:

  • In a saucepan, combine sliced strawberries, sugar, lemon juice, cornstarch, and water.
  • Cook over medium heat, stirring frequently, until the mixture thickens (about 5–7 minutes). Remove from heat and let it cool to room temperature.

5. Assemble the Cheesecake:

  • Once the cheesecake has fully set, spoon the strawberry topping evenly over the cheesecake, spreading it out to the edges.

6. Serve and Enjoy:

  • Carefully remove the cheesecake from the springform pan. Slice and serve chilled.
