Ingredients

For the Cake:

  • 1½ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ¾ cup granulated sugar
  • ½ cup yogurt (curd)
  • ½ cup milk
  • ⅓ cup vegetable oil or melted butter
  • 1 tsp vanilla extract
  • 1 tbsp vinegar or lemon juice

For the Whipped Cream:

  • 2 cups heavy whipping cream, chilled
  • ½ cup powdered sugar
  • 1 tsp vanilla extract

For the Fruit Filling and Topping:

  • 1½ cups fresh fruits (e.g., strawberries, kiwi, pineapple, mango, or berries), chopped
  • ½ cup fruit juice or sugar syrup (for moistening the cake)

Instructions

1. Prepare the Cake:

  • Preheat the oven to 350°F (175°C) and grease and line a 7- or 8-inch round cake pan.
  • In a bowl, whisk together flour, baking powder, baking soda, and salt.
  • In a separate bowl, mix yogurt, sugar, and vanilla until smooth. Add milk, oil, and vinegar; whisk until combined.
  • Gradually fold the dry ingredients into the wet ingredients until the batter is smooth and lump-free.
  • Pour the batter into the prepared pan and bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
  • Cool the cake completely on a wire rack.

2. Prepare the Whipped Cream:

  • In a chilled bowl, beat the heavy cream, powdered sugar, and vanilla extract until stiff peaks form. Keep refrigerated until use.

3. Assemble the Cake:

  • Slice the cooled cake horizontally into two or three layers.
  • Place one layer on a serving plate and lightly brush with fruit juice or sugar syrup to keep it moist.
  • Spread a layer of whipped cream over the cake and top with chopped fresh fruits.
  • Repeat the process with the remaining layers.

4. Frost and Decorate:

  • Spread whipped cream evenly over the top and sides of the assembled cake.
  • Decorate with whole or sliced fresh fruits on top. You can create patterns like concentric circles for a polished look.

5. Chill and Serve:

  • Refrigerate the cake for at least 1–2 hours to let the flavors meld and the whipped cream set.
  • Slice and serve chilled for the best experience.
