Slow Cooker Hearty Potato Bacon Chowder

6 slices of bacon, diced
1 medium onion, chopped
3 garlic cloves, minced
5-6 large potatoes, peeled and cubed
4 cups chicken broth
1 teaspoon dried thyme
1 teaspoon salt
1/2 teaspoon black pepper
1 cup heavy cream
1 cup shredded cheddar cheese
2 tablespoons fresh parsley, chopped
