Ingredients
For the Wraps:
4 large whole wheat or spinach tortillas (gluten-free if needed)
1 ½ cups cooked quinoa (or brown rice)
1 (15-ounce) can chickpeas, drained and rinsed (or 1 ½ cups cooked)
1 cup fresh spinach, chopped
1 cup shredded cabbage (green or purple)
½ cup shredded carrots
