Ingredients:

  • 300g (10 oz) smoked or fresh salmon, skin removed and flaked

  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup heavy cream (or half-and-half for a lighter version)
  • 4 large eggs
  • 1 cup grated cheese (Gruyère, cheddar, or a mix of both)
  • 1 tablespoon olive oil (or butter)
  • Salt and pepper, to taste
  • Pinch of nutmeg (optional)
  • Fresh dill (for garnish)

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C).
  2. Prepare the Crust:
    • If using a pre-made pie crust, simply place it in your quiche dish and set it aside. If you’re making your own, roll it out and fit it into the dish.
    • Optionally, blind-bake the crust for 10 minutes at 375°F to prevent sogginess.
  3. Cook the Spinach:
    • In a skillet, heat the olive oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
    • Add the garlic and cook for another minute until fragrant.
    • Stir in the spinach and cook until wilted. Remove from heat and let it cool slightly.
  4. Prepare the Custard:

  5. Assemble the Quiche:
    • Spread the cooked spinach and onion mixture evenly across the bottom of the pie crust.
    • Flake the salmon and scatter it on top of the spinach.
    • Pour the egg and cream mixture over the top, making sure it’s evenly distributed.
  6. Bake:
    • Bake the quiche in the preheated oven for 35-40 minutes, or until the custard is set and the top is golden brown. You can check by inserting a knife in the center — it should come out clean.
  7. Cool and Serve:
    • Let the quiche cool for 5-10 minutes before slicing. This allows the filling to set and makes it easier to cut.
    • Garnish with fresh dill or a sprinkle of extra cheese if desired.
