Ingredients:
For the Waffle Cake:
- 2 cups (240g) all-purpose flour
- 2 tbsp granulated sugar
- 2 tsp baking powder
- ½ tsp salt
- 2 large eggs
- 1 ½ cups (360ml) whole milk
- 1/3 cup (80g) unsalted butter, melted
- 1 tsp vanilla extract
- 1 tsp cinnamon (optional, for extra flavor)
For the Whipped Chocolate Ganache:
- 8 oz (225g) dark chocolate (or semi-sweet), chopped
- 1 cup (240ml) heavy cream
- 2 tbsp unsalted butter
- 1 tsp vanilla extract
Instructions:
Step 1: Prepare the Waffle Cake
- Preheat your waffle iron according to the manufacturer’s instructions.
- In a large bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon (if using).
- In a separate bowl, beat together the eggs, milk, melted butter, and vanilla extract.
- Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
- Lightly grease the waffle iron with non-stick spray or brush with a little melted butter.
- Pour a small amount of batter into the waffle iron, enough to cover the grid. Close the waffle iron and cook until golden brown and crisp, about 3-4 minutes, depending on your waffle iron.
- Continue to cook the remaining batter until you have 6-8 waffles, depending on the size of your waffles and layers. Allow the waffles to cool slightly on a wire rack.
Step 2: Make the Whipped Chocolate Ganache
- In a heatproof bowl, combine the chopped dark chocolate and heavy cream. Heat in the microwave in 20-second intervals, stirring after each, until the chocolate is fully melted and the mixture is smooth.
- Stir in the butter and vanilla extract. Let the ganache cool to room temperature.
- Once the ganache has cooled, use a hand mixer or stand mixer to whip the ganache for 2-3 minutes, or until it becomes fluffy and light in texture.
Step 3: Assemble the Waffle Cake
- Place one waffle on a serving plate and spread a generous layer of whipped chocolate ganache on top.
- Top with another waffle and repeat the process until all the waffles are stacked with whipped ganache in between each layer.
- Finish by spreading the remaining whipped chocolate ganache over the top of the stacked waffles.

- Chill the waffle cake in the fridge for 30 minutes to set the ganache, or serve immediately for a softer ganache consistency.
