  • 5 tbsp (70g) unsalted butter, melted

For the Cheesecake Filling:

  • 3 (8 oz each) packages cream cheese, softened
  • 1 cup (200g) granulated sugar
  • 1 tsp vanilla extract
  • 3 large eggs
  • ½ cup (120ml) heavy cream
  • 1 cup (about 10 cookies) crushed Oreos
  • Purple gel food coloring

For the Topping:

  • Whipped cream
  • Extra crushed or whole Oreos for garnish
  • Edible glitter or sprinkles (optional)

Instructions

  1. Prepare the Crust:
    • Preheat your oven to 325°F (165°C). Grease a 9-inch springform pan and line the bottom with parchment paper.
    • In a bowl, mix Oreo crumbs and melted butter until well combined.
    • Press the mixture firmly into the bottom of the prepared pan. Chill in the refrigerator while preparing the filling.
  2. Make the Cheesecake Filling:
    • In a large mixing bowl, beat the cream cheese and sugar until smooth and creamy.
    • Add vanilla extract and eggs, one at a time, beating well after each addition.
    • Mix in heavy cream until fully incorporated.
    • Stir in the crushed Oreos.
    • Add purple gel food coloring, a little at a time, until you reach your desired shade.
  3. Assemble and Bake:
    • Pour the cheesecake filling over the chilled crust, smoothing the top with a spatula.
    • Place the springform pan on a baking sheet and bake for 55–65 minutes, or until the edges are set and the center is slightly jiggly.
    • Turn off the oven and leave the cheesecake inside with the door slightly ajar for 1 hour to cool gradually.
    • Remove from the oven and refrigerate for at least 6 hours, or overnight for best results.
  4. Decorate:
    • Pipe whipped cream around the edges or over the top of the cheesecake.
    • Sprinkle with crushed Oreos or place whole Oreos on top.
    • Add edible glitter or sprinkles for an extra pop of color.
  5. Serve:
    • Slice and serve this vibrant and creamy dessert to delight your guests!
