This Heavenly Chocolate Peanut Butter Ooey Gooey Cake is a decadent dessert that combines the best of both worlds—rich chocolate cake with a creamy peanut butter layer, topped with a luscious chocolate ganache. It’s the ultimate indulgent treat that melts in your mouth!
Ingredients
For the Chocolate Cake:
- 1 box (15.25 oz) chocolate cake mix (or any preferred chocolate cake mix)
- 1/2 cup (115g) unsalted butter, melted
- 2 large eggs
- 1/4 cup (60ml) milk
For the Peanut Butter Layer:
- 1 cup (240g) creamy peanut butter
- 1/2 cup (120g) unsalted butter, softened
- 1 cup (120g) powdered sugar
- 2 large eggs
- 1 tsp vanilla extract
For the Chocolate Ganache:
- 1 cup (170g) semi-sweet chocolate chips
- 1/2 cup (120ml) heavy cream
Instructions
1. Prepare the Chocolate Cake Base:
- Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking dish.
- In a large bowl, combine the chocolate cake mix, melted butter, eggs, and milk. Stir until smooth and fully combined.
- Pour the cake batter into the prepared baking dish and spread it evenly across the bottom.
2. Prepare the Peanut Butter Layer:
- In a separate bowl, beat together the peanut butter, softened butter, and powdered sugar until smooth and creamy.
- Add the eggs and vanilla extract, and continue to beat until well incorporated.
- Pour the peanut butter mixture over the cake batter in the baking dish. Do not mix them—just spread the peanut butter layer on top.
3. Bake the Cake:
- Bake at 350°F (175°C) for 35-40 minutes, or until the top is golden and the cake is set. The center should still be soft and slightly gooey, which is what gives it that irresistible “ooey gooey” texture!
4. Prepare the Chocolate Ganache:
- While the cake is baking, prepare the chocolate ganache. In a small saucepan, heat the heavy cream over medium heat until it just starts to simmer.
- Pour the hot cream over the semi-sweet chocolate chips in a heatproof bowl. Let it sit for 2-3 minutes, then stir until the chocolate is completely melted and smooth.
5. Finish the Cake:
- Once the cake is done, remove it from the oven and let it cool for a few minutes.
- Drizzle the chocolate ganache over the top of the warm cake, spreading it evenly.
- Allow the cake to cool slightly so the ganache sets before cutting into squares.
Tips and Variations
- Add texture: Add chopped peanuts, mini chocolate chips, or a swirl of peanut butter to the batter for extra crunch and flavor.
- For a stronger peanut butter flavor: Mix some peanut butter directly into the chocolate ganache.
- Serve with a twist: Top each slice with a scoop of vanilla ice cream or whipped cream for an even more indulgent dessert experience.
- Storage: Store leftovers in an airtight container for up to 3 days at room temperature, or refrigerate for up to 5 days.
