Ingredients:

  • For the Cake Layer:
    • 1 store-bought sponge cake or 8-10 ladyfingers (or homemade if preferred)
    • 1/4 cup of sherry, fruit juice, or even orange liqueur (optional)
  • For the Custard Layer:
    • 2 cups whole milk
    • 1/2 cup sugar
    • 4 large egg yolks
    • 2 tablespoons cornstarch
    • 1 teaspoon vanilla extract
    • 2 tablespoons unsalted butter
  • For the Fruit Layer:
    • 1 cup mixed berries (such as raspberries, strawberries, blueberries)
    • 1/2 cup fruit cocktail or canned peaches (optional)
    • 1/4 cup pomegranate seeds (optional, for extra holiday color)
  • For the Whipped Cream Layer:
    • 2 cups heavy cream
    • 2 tablespoons powdered sugar
    • 1 teaspoon vanilla extract
  • For Garnishing:
    • Crumbled gingerbread cookies, crushed candy canes, or chopped nuts
    • Additional berries, pomegranate seeds, or candied fruits

Instructions:

1. Prepare the Cake Layer:

  • Slice the sponge cake into pieces or cubes.
  • If desired, drizzle with sherry, fruit juice, or orange liqueur to make it moist and flavorful.

2. Make the Custard:

  • Heat the milk in a saucepan over medium heat until warm (but not boiling).
  • In a separate bowl, whisk the egg yolks, sugar, and cornstarch until smooth.
  • Slowly pour the warm milk into the egg mixture while whisking constantly.
  • Return the mixture to the saucepan and cook over low heat, whisking continuously until it thickens into a custard.
  • Remove from heat, stir in vanilla extract and butter until smooth. Let it cool.

3. Whip the Cream:

  • In a large bowl, beat the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.

4. Assemble the Trifle:

  • In a large glass bowl, layer the sponge cake pieces at the bottom.
  • Pour half of the custard over the cake layer, spreading evenly.
  • Add a layer of mixed berries and other fruits.
  • Repeat the layers with the remaining cake, custard, and fruit.

5. Top with Whipped Cream:

  • Spoon the whipped cream on top of the trifle, smoothing it out with a spatula.

6. Chill and Serve:

  • Refrigerate the trifle for at least 4 hours, or preferably overnight to allow the flavors to meld together.
