Ingredients
- 2 ½ cups granulated sugar
- ½ cup light corn syrup
- ½ cup water
- 2 large egg whites, at room temperature
- 1 teaspoon vanilla extract
- ½ cup chopped nuts (optional)
- Pinch of salt
Instructions
- Prepare your workspace:
- Line a baking sheet with parchment paper or wax paper.
- Have a candy thermometer ready.
- Cook the syrup:
- In a medium saucepan, combine sugar, corn syrup, and water.
- Cook over medium heat, stirring constantly until the sugar dissolves.
- Attach the candy thermometer to the side of the pan.
- Continue cooking, without stirring, until the mixture reaches 250°F (hard-ball stage).
- Beat the egg whites:
- While the syrup is cooking, beat the egg whites and a pinch of salt in a large bowl with an electric mixer on high speed until stiff peaks form.
- Combine syrup and egg whites:
- Once the syrup reaches 250°F, remove it from the heat.
- Gradually pour the hot syrup into the egg whites in a thin, steady stream, while continuing to beat on medium-high speed.
- Be careful to pour the syrup between the beaters and the side of the bowl to avoid splattering.
- Mix until fluffy:
- Add the vanilla extract.
- Continue beating until the mixture becomes thick, glossy, and holds its shape (about 5–7 minutes).
- If using nuts, fold them in gently at the end.
- Shape the candies:
- Quickly drop spoonfuls of the candy onto the prepared baking sheet.
- Work fast, as the candy will set quickly.
- Let it set:
- Allow the divinity to cool and firm up at room temperature for 1–2 hours.
- Store:
- Store the candies in an airtight container at room temperature for up to a week.
