Ingredients:

For the Rice Krispies Layer:

  • 6 cups Rice Krispies cereal
  • 1 cup creamy peanut butter
  • ½ cup unsalted butter
  • 1 cup powdered sugar
  • 1 tsp vanilla extract

For the Chocolate Coating:

  • 1 cup semi-sweet chocolate chips
  • ¼ cup creamy peanut butter
  • 1 tbsp unsalted butter

Instructions:

1. Prepare the Rice Krispies Mixture:
  • In a large saucepan, melt the butter over medium heat.
  • Once melted, stir in the peanut butter and continue to heat until the peanut butter is fully melted and the mixture is smooth.
  • Remove from heat and stir in the powdered sugar and vanilla extract until well combined.
  • Add the Rice Krispies cereal and mix gently to coat the cereal with the peanut butter mixture.
2. Form the Roll:
  • Place a large piece of parchment paper or wax paper on a flat surface.
  • Transfer the Rice Krispies mixture onto the parchment paper and press it into an even rectangle, about 1/2 inch thick.
  • Using your hands, gently roll the mixture into a log or cylinder shape. Be sure to press the edges as you roll to keep the shape intact. Once rolled, gently seal the ends to prevent the filling from spilling out.
3. Prepare the Chocolate Coating:
  • In a microwave-safe bowl, combine the chocolate chips, peanut butter, and butter.
  • Microwave in 20-30 second intervals, stirring in between, until the mixture is smooth and melted.
4. Coat the Roll:
  • Place the Rice Krispies roll onto a cooling rack or a piece of parchment paper.
  • Pour the melted chocolate peanut butter coating over the roll, using a spatula to spread it evenly over the top and sides of the roll.
  • Once coated, let the chocolate set for a few minutes at room temperature or place the roll in the refrigerator for 15-20 minutes to fully harden.
5. Slice and Serve:
  • Once the chocolate has set, slice the roll into 1-inch pieces using a sharp knife.
  • Serve and enjoy!

Tips:

  • For extra texture: Add a handful of crushed pretzels or chopped nuts into the Rice Krispies mixture for added crunch.
  • Storage: Store the roll in an airtight container in the refrigerator for up to 1 week. You can also freeze slices for longer storage.
  • Make Ahead: The roll can be made a day in advance. Just refrigerate it until ready to slice and serve.

This Chocolate Peanut Butter Rice Krispies Roll is a perfect treat for any peanut butter and chocolate lover! With its crispy texture, smooth filling, and decadent chocolate coating, it’s sure to be a hit at any gathering.
