These decadent Blueberry Truffles are a delightful combination of creamy, fruity filling and smooth, rich chocolate. Perfect for gifting or enjoying as a special treat, they bring together the sweet tang of blueberries and the indulgence of chocolate in every bite.
Ingredients:
For the Blueberry Filling:
- 1 cup fresh or frozen blueberries (thawed if frozen)
- ¼ cup powdered sugar
- 2 tbsp heavy cream
- 1 tsp lemon juice
- 1 tsp vanilla extract
- 1 tbsp butter (optional, for extra creaminess)
For the Chocolate Coating:
- 2 cups high-quality white chocolate chips or chopped white chocolate (you can also use milk or dark chocolate)
- 1 tbsp vegetable oil or coconut oil (to help with melting)
- Sprinkles or extra dried blueberries (optional, for decoration)
Instructions:
1. Prepare the Blueberry Filling:
- In a small saucepan, add the blueberries and cook over medium heat. Stir occasionally until the berries break down and become soft, about 5-7 minutes.
- Once the blueberries have broken down, add the powdered sugar, heavy cream, lemon juice, and vanilla extract. Continue to cook and stir for another 2-3 minutes until the mixture thickens and becomes a smooth compote.
- Remove from heat and stir in the butter for extra creaminess, if using.
- Let the blueberry mixture cool completely. Once cooled, transfer it to the fridge to chill for 1-2 hours, until it firms up slightly.
2. Shape the Truffles:
- Once the blueberry mixture has cooled and thickened, scoop small spoonfuls (about 1 teaspoon each) and roll them into balls. Place the formed truffles onto a parchment-lined baking sheet.
- Place the sheet in the freezer for at least 30 minutes to firm up the truffles.
3. Prepare the Chocolate Coating:
- While the truffles are chilling, melt the white chocolate (or your chocolate of choice). You can melt it in a microwave-safe bowl in 30-second intervals, stirring in between, or use a double boiler on the stove.
- Once the chocolate is smooth, stir in the vegetable oil or coconut oil to help the chocolate coat the truffles more smoothly.
4. Dip the Truffles:
- Once the truffles are firm, dip each one into the melted chocolate, using a fork or dipping tool to coat them completely. Allow the excess chocolate to drip off.
- Place the dipped truffle back on the parchment paper. Repeat until all the truffles are coated.
5. Decorate (Optional):
- If desired, sprinkle the top of each truffle with dried blueberries, extra powdered sugar, or colorful sprinkles for a festive touch.
6. Set and Serve:
- Let the truffles sit at room temperature for about 30 minutes to allow the chocolate coating to set. Alternatively, you can refrigerate them for a quicker set.
- Once the chocolate is firm, store the truffles in an airtight container in the refrigerator for up to a week.
Tips:
- Flavor Variations: You can use dark or milk chocolate for the coating instead of white chocolate for a different flavor.
- Making Ahead: These truffles can be made a few days ahead of time, and the flavors will only improve as they sit.
- For Extra Flavor: Try adding a dash of lemon zest or a splash of blueberry extract to the filling for more intense blueberry flavor.
These Blueberry Truffles are a perfect balance of sweet, creamy, and fruity. With their smooth, velvety texture and vibrant flavor, they’re a treat that’s sure to impress!
