Ingredients:
For the Bake:
- 10 oz fresh spinach (or 1 package frozen spinach, thawed and drained)
- 1 ½ cups ricotta cheese (whole milk or part-skim)
- 1 cup mozzarella cheese, shredded
- ½ cup Parmesan cheese, grated
- 2 large eggs
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp dried basil
- ¼ tsp nutmeg (optional, adds warmth)
- Salt and pepper, to taste
- ¼ cup breadcrumbs (optional, for topping)
Instructions:
1. Preheat the Oven:
- Preheat your oven to 375°F (190°C). Grease a 9×9-inch baking dish or a similarly sized casserole dish with a little olive oil or non-stick spray.
2. Prepare the Spinach:
- If using fresh spinach, heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the spinach and cook for 2-3 minutes, stirring occasionally, until wilted. Let it cool slightly, then squeeze out any excess water.
- If using frozen spinach, simply thaw and drain it well.
3. Prepare the Ricotta Mixture:
- In a large bowl, combine the ricotta cheese, mozzarella, Parmesan, eggs, garlic, oregano, basil, nutmeg (if using), salt, and pepper. Stir until well combined.
- Add the cooked spinach to the cheese mixture and stir until the spinach is evenly distributed.
4. Assemble the Bake:
- Transfer the spinach and ricotta mixture into the prepared baking dish. Spread it out evenly and smooth the top.
- Sprinkle the breadcrumbs evenly over the top for a crispy, golden finish (optional).
5. Bake:
- Bake in the preheated oven for 25-30 minutes, or until the top is golden and the edges are bubbly.
6. Serve:
- Allow the bake to cool for a few minutes before serving. Garnish with additional Parmesan cheese or fresh herbs, if desired.
Tips:
- Make Ahead: This dish can be assembled the night before and stored in the fridge, then baked when ready.
- Extra Flavor: Add sautéed onions or mushrooms for extra depth of flavor.
- For a Creamier Version: Mix in a little heavy cream or sour cream with the ricotta for a richer texture.
Enjoy this wholesome and enchanting spinach ricotta bake as a delightful side dish or a satisfying main course!
