No-Bake Orange Creamsicle Cheesecake Recipe
Ingredients:
For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
For the Cheesecake Filling:
- 16 oz (2 cups) cream cheese, softened
- 1 cup heavy cream
- 1 cup powdered sugar
- 1 tsp vanilla extract
- 1/2 tsp orange extract (optional, for extra orange flavor)
- Zest of 1 orange
- 1/2 cup fresh orange juice
- 1 tbsp orange gelatin (or 2 tbsp unflavored gelatin, dissolved in 2 tbsp warm water)
For the Orange Glaze (Optional):
- 1/4 cup fresh orange juice
- 2 tbsp powdered sugar
- 1 tsp cornstarch (optional, to thicken)
Instructions:
1. Make the Crust:
- In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Stir until the crumbs are evenly coated and the mixture resembles wet sand.
- Press the mixture into the bottom of a 9-inch springform pan, using the back of a spoon to pack it down tightly.
- Refrigerate the crust while you prepare the cheesecake filling to allow it to set.
2. Make the Cheesecake Filling:
- In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy (about 2 minutes).
- Add the powdered sugar, vanilla extract, orange extract (if using), and orange zest. Beat until well combined.
- In a separate bowl, whisk together the fresh orange juice and gelatin (or unflavored gelatin) until dissolved. If you are using orange gelatin, just dissolve it in the orange juice and allow it to cool before adding it to the filling.
- Pour the orange juice mixture into the cream cheese mixture and beat until combined.
- In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture, taking care not to deflate it too much. The filling should be light and fluffy.
3. Assemble the Cheesecake:
- Pour the cheesecake filling over the prepared graham cracker crust in the springform pan.
- Smooth the top with a spatula and cover the pan with plastic wrap or foil.
- Refrigerate the cheesecake for at least 4 hours, or preferably overnight, to allow it to set properly.
4. Make the Orange Glaze (Optional):
- In a small saucepan, combine the fresh orange juice, powdered sugar, and cornstarch (if using).
- Bring the mixture to a simmer over medium heat, stirring constantly. Once it thickens, remove from heat and let it cool to room temperature.
- Drizzle the glaze over the chilled cheesecake before serving for a glossy finish.
5. Serve and Enjoy:
- Once the cheesecake has set, remove it from the springform pan and place it on a serving platter.
- Optionally, garnish with orange slices, zest, or whipped cream before serving.
- Slice and enjoy this refreshing No-Bake Orange Creamsicle Cheesecake!
Tips:
- If you don’t want to make the glaze, you can simply top the cheesecake with fresh orange slices or whipped cream for a simple yet elegant touch.
- For an extra burst of flavor, you can add some orange liqueur (like Grand Marnier) to the filling, but this is optional.
- This cheesecake can also be made with lemon juice for a citrus twist!
This No-Bake Orange Creamsicle Cheesecake is the perfect dessert to enjoy during warmer months or any time you’re craving a light, refreshing, and indulgent treat. Enjoy!
