This Moist Coffee Cake is the perfect treat for any coffee lover! With a tender crumb, a cinnamon-sugar swirl, and a crumbly streusel topping, it’s the ideal pairing with a warm cup of coffee or tea.


Ingredients

For the Cake:

  • 2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup sour cream or plain yogurt

For the Cinnamon Sugar Swirl:

  • 1/2 cup brown sugar, packed
  • 1 tbsp ground cinnamon

For the Streusel Topping:

  • 1/2 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter, cold and cubed
  • 1/2 tsp ground cinnamon

Instructions

1. Prepare the Streusel Topping:

  1. In a medium bowl, combine the flour, sugar, and cinnamon for the streusel.
  2. Add the cold cubed butter and mix with your fingers or a pastry cutter until the mixture becomes crumbly. Set aside.

2. Make the Cinnamon Sugar Swirl:

  1. In a small bowl, mix together the brown sugar and cinnamon for the swirl. Set aside.

3. Prepare the Cake Batter:

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round or square cake pan.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
  3. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Beat in the eggs, one at a time, followed by the vanilla extract.
  5. Add the dry ingredients in three parts, alternating with the sour cream, beginning and ending with the dry ingredients. Mix until just combined.

4. Assemble the Cake:

  1. Pour half of the batter into the prepared cake pan and smooth the top.
  2. Sprinkle half of the cinnamon-sugar mixture over the batter.
  3. Add the remaining batter on top and smooth again.
  4. Sprinkle the remaining cinnamon-sugar swirl over the top of the batter.
  5. Add the streusel topping evenly over the top.

5. Bake the Cake:

  • Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted into the center of the cake comes out clean.

6. Cool and Serve:

  1. Let the cake cool in the pan for 10-15 minutes, then transfer to a wire rack to cool completely.
  2. Slice and serve with your favorite coffee or tea.

Tips:

  • For Extra Moistness: You can substitute part of the butter with oil for added moisture.
  • Add Nuts: For a crunchier topping, add chopped walnuts or pecans to the streusel mix.
  • Storage: This cake can be stored in an airtight container at room temperature for up to 3 days or refrigerated for up to 1 week.
