Optional Garnishes:

  • Chocolate shavings
  • Cocoa powder

Instructions

1. Prepare the Base:

  • Place the brownie or sponge cake layer in the bottom of a springform pan. Set aside.

2. Make the Dark Chocolate Mousse:

  1. Sprinkle gelatin over water in a small bowl and let it bloom for 5 minutes.
  2. Heat 1/2 cup heavy cream until steaming, then pour over the dark chocolate. Let sit for 2 minutes, then stir until smooth.
  3. Microwave the gelatin for 10 seconds until melted, then stir it into the chocolate mixture.
  4. Gently fold the whipped cream into the chocolate mixture. Pour over the base and spread evenly. Chill for 20-30 minutes.

3. Make the Milk Chocolate Mousse:

  • Repeat the same process as the dark chocolate mousse using milk chocolate. Pour over the dark chocolate layer and chill for another 20-30 minutes.

4. Make the White Chocolate Mousse:

  • Repeat the process once more with white chocolate. Pour over the milk chocolate layer and smooth the top.

5. Chill and Set:

  • Refrigerate the cake for at least 4-6 hours, or overnight, until fully set.

6. Garnish and Serve:

  • Run a knife around the edge of the cake before removing the springform ring.
  • Garnish with chocolate shavings, cocoa powder, or fresh berries. Slice and serve chilled!

Tips:

  • Make It Ahead: This cake can be made 1-2 days in advance for stress-free entertaining.
  • Customize It: Swap one of the chocolate layers for a flavored mousse, like raspberry or coffee.
  • Even Layers: Chill each mousse layer until firm before adding the next to prevent mixing.

This elegant dessert is sure to impress guests and satisfy your deepest chocolate cravings!
