Baileys Chocolate Mousse Trifle is a decadent dessert that layers rich chocolate flavors with the creamy, boozy kick of Baileys Irish Cream. Here’s a recipe to guide you in creating this show-stopping dessert.

Ingredients

For the Chocolate Mousse:

  • 200g (7 oz) dark chocolate (70% cocoa), chopped
  • 3 large eggs, separated
  • 3 tbsp Baileys Irish Cream
  • 300ml (1 1/4 cups) heavy cream, whipped to soft peaks
  • 50g (1/4 cup) granulated sugar

For the Trifle Layers:

  • 1 store-bought or homemade chocolate cake (cut into cubes)
  • 100ml (1/2 cup) strong coffee (cooled)
  • 3 tbsp Baileys Irish Cream (optional, for soaking the cake)
  • 500ml (2 cups) whipped cream
  • 100g (1/2 cup) chocolate shavings or curls (for garnish)

Optional Add-Ins:

  • Fresh berries, like raspberries or strawberries
  • Crushed chocolate cookies
  • Chopped nuts, like hazelnuts or almonds

Instructions

1. Prepare the Chocolate Mousse:

  1. Melt the chopped chocolate in a heatproof bowl set over a pot of simmering water. Stir until smooth, then set aside to cool slightly.
  2. In a separate bowl, whisk the egg yolks and Baileys together. Gradually stir in the melted chocolate until smooth.
  3. In another bowl, whisk the egg whites with the granulated sugar until stiff peaks form. Gently fold this into the chocolate mixture.
  4. Finally, fold in the whipped cream until no streaks remain. Chill in the refrigerator for at least 1 hour.

2. Assemble the Trifle:

  1. Place a layer of chocolate cake cubes at the bottom of a trifle dish or individual serving glasses.
  2. Drizzle the coffee and Baileys over the cake cubes for added moisture.
  3. Add a layer of chocolate mousse, followed by whipped cream. Repeat the layers until you reach the top of the dish.
  4. Top with a final layer of whipped cream and garnish with chocolate shavings or curls.

3. Chill and Serve:

  • Refrigerate for at least 2-3 hours (or overnight) to allow the flavors to meld.
  • Serve chilled and enjoy this indulgent treat!
