Instructions
1. Cook the Pasta
- Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente, then drain and set aside, reserving about 1/2 cup of pasta water.
2. Season and Cook the Chicken
- Rub the chicken breasts with Cajun seasoning, salt, and pepper on both sides.
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 5-7 minutes per side until they are golden brown and cooked through (internal temperature should reach 165°F or 74°C).
- Remove the chicken from the skillet, let it rest for a few minutes, then slice it into strips.
3. Make the Creamy Cajun Sauce
- In the same skillet, melt 2 tablespoons of butter over medium heat. Add the diced onion and cook for 3-4 minutes, until softened.
