- 1 cup heavy whipping cream, whipped to stiff peaks
For the Chocolate Layer:
- 6 oz semi-sweet chocolate, melted and slightly cooled
- 1/2 cup heavy cream
For the Cherry Topping:
- 1 can (21 oz) cherry pie filling
- Fresh cherries (optional, for garnish)
For the Whipped Cream Topping:
- 1 cup heavy whipping cream
- 3 tbsp powdered sugar
- 1/2 tsp vanilla extract
Optional Garnishes:
- Chocolate shavings
- Fresh cherries
- Grated chocolate or cocoa powder dust
Instructions
- Prepare the Crust
- Mix chocolate cookie crumbs with melted butter until combined.
- Press the mixture into the bottom of a springform pan or serving dish. Chill in the refrigerator for 20–30 minutes.
- Make the Cheesecake Layer
- In a large mixing bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
- Gently fold in the whipped heavy cream. Spread this mixture evenly over the chilled crust. Refrigerate to set for at least 1 hour.
- Prepare the Chocolate Layer
- Heat the heavy cream in a small saucepan until warm (not boiling).
- Pour the warm cream over the melted chocolate and whisk until smooth. Let cool slightly.
- Pour the chocolate mixture over the cheesecake layer and smooth it out evenly. Chill again until firm.
- Add the Cherry Topping
- Once the chocolate layer is set, spread the cherry pie filling evenly over the top. Reserve some cherries for garnish if desired.
- Finish with Whipped Cream
- Whip the heavy cream with powdered sugar and vanilla until stiff peaks form. Pipe or spread the whipped cream decoratively over the cherry layer.
- Garnish and Serve
- Add fresh cherries, chocolate shavings, or a dusting of cocoa powder on top.
- Chill for at least 4 hours or overnight for best results. Slice and serve cold.
