Black Forest Swiss Roll Recipe
Ingredients:
For the Cake:
- 4 large eggs
- 100 g (1/2 cup) granulated sugar
- 60 g (1/2 cup) all-purpose flour
- 30 g (1/4 cup) cocoa powder
- 1/2 tsp baking powder
- Pinch of salt
- 1 tsp vanilla extract
For the Filling:
- 200 ml (3/4 cup) heavy cream, chilled
- 2 tbsp powdered sugar
- 1/2 tsp vanilla extract
- 1 cup pitted and chopped cherries (fresh or canned)
For Decoration:
- 100 g (3.5 oz) dark chocolate, melted
- Whole cherries (for garnish)
- Whipped cream (optional)
Instructions:
- Prepare the Cake:
- Preheat the oven to 180°C (350°F). Line a 10×15-inch jelly roll pan with parchment paper.
- Beat the eggs and sugar together on high speed until pale, thick, and tripled in volume (about 5 minutes).
- Sift together the flour, cocoa powder, baking powder, and salt. Gently fold the dry ingredients into the egg mixture in three parts. Add vanilla extract and mix just until combined.
- Pour the batter evenly into the prepared pan. Bake for 10–12 minutes, until the cake springs back when touched.
- Roll the Cake:
- Turn the warm cake onto a clean kitchen towel dusted with powdered sugar. Carefully peel off the parchment paper. Roll the cake tightly from the shorter end with the towel inside. Let it cool completely.
- Make the Filling:
- Whip the chilled cream with powdered sugar and vanilla extract until stiff peaks form. Fold in the chopped cherries.
- Assemble the Roll:
- Unroll the cooled cake. Spread the whipped cream filling evenly over the surface. Re-roll the cake without the towel, keeping it tight but gentle.
- Decorate:
- Drizzle the roll with melted dark chocolate. Garnish with whipped cream swirls and whole cherries for a true Black Forest vibe.
- Chill and Serve:
- Refrigerate for at least 1 hour before slicing to let the flavors meld. Slice into rounds and enjoy the chocolate-cherry decadence!
