Ingredients
For the Base Layer (Chocolate Cake or Brownie)
- 1/2 cup unsalted butter, melted
- 1 cup granulated sugar
- 2 large eggs
- 1/2 cup all-purpose flour

- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
For the Dark Chocolate Mousse
- 6 oz dark chocolate (60–70% cocoa), chopped
- 1 cup heavy whipping cream, divided
- 1 teaspoon vanilla extract
For the Milk Chocolate Mousse
- 6 oz milk chocolate, chopped
- 1 cup heavy whipping cream, divided
For the White Chocolate Mousse
- 6 oz white chocolate, chopped
- 1 cup heavy whipping cream, divided
For Garnish
- Chocolate shavings, curls, or cocoa powder
- Whipped cream (optional)
Instructions
Step 1: Prepare the Base Layer
- Preheat the oven to 350°F (175°C) and grease a 9-inch springform pan.
- In a bowl, mix melted butter and sugar until smooth. Add eggs and vanilla, mixing well.
- Sift in flour, cocoa powder, and salt. Mix until just combined.
- Pour the batter into the prepared pan and spread evenly.
- Bake for 20–25 minutes, or until a toothpick comes out with a few moist crumbs. Let cool completely.
Step 2: Make the Mousse Layers
Dark Chocolate Mousse
- Melt dark chocolate in a heatproof bowl over a pot of simmering water (double boiler method). Let cool slightly.
- Whip 3/4 cup of heavy cream to soft peaks.
- Heat the remaining 1/4 cup of cream until hot (not boiling). Stir it into the melted chocolate until smooth.
- Fold in the whipped cream gently until combined. Spread over the cooled base and refrigerate for 30 minutes.
Milk Chocolate Mousse
- Repeat the steps above using milk chocolate.
- Spread the milk chocolate mousse evenly over the dark chocolate layer and refrigerate for another 30 minutes.
White Chocolate Mousse
- Repeat the steps above using white chocolate.
- Spread the white chocolate mousse evenly on top.
Step 3: Chill and Garnish
- Refrigerate the entire torte for at least 4–6 hours, or until fully set.
- Remove from the springform pan carefully.
- Garnish with chocolate shavings, curls, or a dusting of cocoa powder. Add whipped cream rosettes for extra flair if desired.

- Stabilized Mousse: If you need a firmer mousse, dissolve 1 teaspoon of unflavored gelatin in 1 tablespoon water and mix it into the hot cream for each mousse layer.
