LEMON POPPY SEED LOAF WITH GLAZE

1. Preheat oven to 350°F (175°C). Grease and line a loaf pan with parchment paper.

2. Dry ingredients: In a bowl, whisk flour, poppy seeds, baking powder, baking soda, and salt.

3. Wet mix: Beat butter and sugar until light and fluffy. Add eggs one at a time. Mix in lemon zest, juice, and vanilla.

4. Combine: Add dry mix in 2 parts, alternating with buttermilk. Mix until just combined.

5. Bake: Pour into pan. Bake 45–55 mins or until toothpick comes out clean. Cool completely.

6. Glaze: Mix powdered sugar and lemon juice until smooth. Drizzle over cooled loaf.

7. Garnish: Top with lemon slices and a sprinkle of poppy seeds.
