Preheat your oven to 400°F (200°C).
In a shallow dish, combine the breadcrumbs, parsley, dill, Parmesan cheese, salt, and pepper.
Brush the cod fillets with olive oil, then press them into the breadcrumb mixture, ensuring they are well-coated.

Place the coated fillets on a baking sheet lined with parchment paper.
Bake in the preheated oven for 12-15 minutes, or until the fish is cooked through and the crust is golden brown.
While the fish is baking, melt the butter in a small saucepan over medium heat.
Add the minced garlic and cook for about 1 minute, until fragrant.
Stir in the lemon juice and continue to cook for another minute, then remove from heat.
Once the fish is done, drizzle the lemon butter sauce over the fillets.

Variations & Tips
For a gluten-free version, substitute the breadcrumbs with crushed gluten-free crackers or almond flour. You can also try different herbs such as thyme or basil for a unique flavor profile. If you prefer a spicier kick, add a pinch of cayenne pepper to the breadcrumb mixture. For a dairy-free option, omit the Parmesan cheese and use a plant-based butter alternative for the sauce.
